Salad with fried mushrooms and chicken is a surprisingly tender cold appetizer that can be prepared not only for the festive table, but also for the usual meal. In this recipe, a salad with mushrooms, but in the mushroom season you can replace them with fried forest mushrooms, it will be even tastier. A salad with chicken thighs or shins, that is, with red chicken meat, will be more delicate in taste than if you cook it with chicken breast, since white meat is rather dry.
Another secret to making vegetables salad with meat and mushrooms is salt. Never salt the ingredients separately during the cooking process, only all together after the prepared products are gathered in the salad bowl. First, if salted separately, the rate of salt increases greatly, and this is harmful. Secondly, some products, for example, fresh cucumbers and greens, after contact with salt, begin to release moisture. This will lead to the fact that in a bowl with a salad a lake of cucumber juice is formed.

Ingredients for salad with grilled mushrooms and chicken
- 400 g of boiled chicken;
- 250 g of champignons;
- 140 g carrots;
- 140 g onions;
- 50 g green onions;
- 30 g of dill;
- 200 g fresh cucumbers;
- 40 ml of olive oil;
- vegetable oil for frying, salt, pepper, granulated sugar, apple vinegar.
Method of cooking chicken salad with fried mushrooms
Peeled mushrooms cut into thin slices. In a frying pan, heat 2 tablespoons of odorless vegetable oil, fry the mushrooms for a few minutes. Put the fried mushrooms in a salad bowl, leave the oil in the pan.
In the same pan put chopped finely onions. Fry onions for 6 minutes until it gets a caramel shade. Fried onions add to the mushrooms.
We remove meat from boiled chicken thighs, cut into small cubes.
Fresh carrots cut into thin strips. Put the sliced carrots in a frying pan, after the onions, cover with a lid, simmer on low heat for 12 minutes.
Fresh cucumbers cut noodles. If the cucumber skin is tough, then you need to cut it, cut the early cucumbers along with the delicate skin. Rinse green onions and dill with cold water, chop finely.
In a deep salad bowl, mix boiled chicken with onions and fried mushrooms. This is the basis of chicken salad with fried mushrooms.
Add sliced cucumbers.
Put the finely chopped greens.
Add cooled stewed carrots to the rest of the ingredients of the salad with fried mushrooms and chicken and only at this stage add the salt to your liking.
Then add a pinch of granulated sugar and 1-2 teaspoons of apple cider vinegar to the salad, pepper them with freshly ground black pepper, mix the ingredients thoroughly.
Season the salad with high-quality olive oil, mix.
To decorate the salad, cut the green onion feather along. Onions cut into long thin strips. Put the strips for a few minutes in a bowl of ice water. In cold water, onion strips will turn into beautiful curlicues.
