The most delicious sandy apple pie is a biscuit with apples and meringue, which consists of unsweetened shortcrust dough, baked apples and tender meringue with a ruddy crust. You will need time to prepare it, but basically it is, so to speak, passive time, which does not require your immediate, long-term participation.

Ingredients for Apple Pie with Meringue
For the filling:
- 600 g apples;
- 15 g of vegetable oil;
- 5 g ground cinnamon;
- 1/3 of nutmeg.
For the test:
- 150 g of wheat flour;
- 2 \ 3 teaspoon baking powder;
- 75 g butter;
- 3 raw egg yolks;
- pinch of fine salt.
For meringue:
- 3 raw egg whites;
- 120 g icing sugar.
Method of making apple shortcake with meringue
For the filling, bake apples - wash, remove the core, cut into slices about a centimeter thick. Cover the baking sheet with a piece of parchment for baking, lay out sliced apples, pour over refined vegetable oil (odorless). We bake on the middle shelf of the oven for 25 minutes at a temperature of 165 degrees Celsius.
While the apples are baked, we make the biscuit dough. Butter cut into small cubes.
Pour wheat flour of the highest grade mixed with baking powder and fine salt to the butter. Rub the ingredients until crumbs form.
Smash raw eggs in a deep bowl, separate the yolks from the proteins. Then we mix yolks with a crumb from flour and butter, quickly knead the dough.
Separate about 50 g of dough, put it in the freezer. The remaining piece of roll out a layer of 4-5 millimeters thick, put on a clean, dry baking sheet.
To transfer shortbread dough on a baking sheet, you need to roll it between two sheets of parchment.
We form on the baking sheet a round biscuit, with a tablespoon we lightly press it in a circle to make a low side.
Place cooled, baked apples on the dough with a fan. You can put multiple layers.
Sprinkle apples with ground cinnamon and grated nutmeg. Put the baking sheet in a cool place while we are cooking the meringue.
Raw whites are whipped in a food processor for 2-3 minutes to obtain a fluffy white mass. Then slowly pour sugar powder. Powder should be poured in small portions, otherwise the whole kitchen will be covered with white dust.
Beat the squirrel with powder to the state of stable peaks, put on apples.
We distribute the meringue over the apples in an even layer, the mass is thick, so you should not be afraid that it will spread.
We remove frozen dough from the freezer, rub it on a large grater, sprinkle the meringue evenly.
Send the pan to the oven heated to 160 degrees for 40-45 minutes. Watch the baking, but do not open the door! Meringue is a very capricious thing: a little that will settle, and the cake will turn out to be completely flat. If necessary, after 20 minutes, the baking temperature can be lowered to 130 degrees.
Turn off the oven, open the door slightly, leave the cake in the oven until it cools completely.
Cut the sandy apple pie with meringue for portions, sprinkle with ground cinnamon, serve to the table with a cup of hot tea. Enjoy your meal!
