Homemade muffins with dried fruits - a simple recipe with figs, cranberries and prunes, which obey even the inexperienced in the pastry business novice pastry chef. A delicious cupcake on kefir with cognac and dried fruit will decorate any home party, and baking can be prepared in less than an hour. However, there is one important point - the dried fruits must be soaked in cognac for at least 6 hours. I advise you to do this on the eve of the preparation - they will be well soaked overnight. Instead of brandy, you can use rum, whiskey or strong liquor.

Put the dried fruits in a bowl, pour boiling water. After a few minutes, drain the water, thoroughly wash the dried fruit with running water.

Making dough for muffins with dried fruit. Mix the softened butter with sugar and a pinch of fine salt.
Beat the eggs with a sugar mixer.
Beat the ingredients well to make the mass light and fluffy, and the granules of granulated sugar dissolved.
Then add fatty, slightly warm kefir. You can put a bottle of kefir for a couple of minutes in hot water, so it heats up faster.
Next, add the dry ingredients to the liquid - pour sifted wheat flour, semolina and ground orange peel. Also pour baking powder and baking soda. Carefully knead the dough so that there are no lumps left.
When the dough for muffins is ready, add dried fruit soaked in cognac and ground cinnamon.
Again, thoroughly mix the dough and heat the oven to 180 degrees Celsius.
We take paper molds, insert them into silicone or metal ones. If you do not support the paper a more dense form, the cupcakes spread out in breadth.
We send muffins with dried fruits in a preheated oven, bake for about 20-25 minutes. The forms are small, usually this time is sufficient for baking. Readiness is checked with a wooden stick - if it comes out of baking dry, then it can be taken out of the oven.
Once cooled, homemade muffins with dried fruit are sprinkled with powdered sugar through a sieve and served to the table with tea or milk. Enjoy your meal!
