Pumpkin cinnamon casserole is juicy and incredibly tasty, a bit like pumpkin pie, but, unlike pie, it is more tender and just melts in your mouth! This is the perfect recipe for sweet pastries for a family with children. As a rule, kids do not like pumpkin very much, but to eat sweetie is never against it. Sweet pumpkin casserole is a delicious and healthy dessert, which, moreover, is prepared very simply and quickly.
Pumpkin pulp for casserole should be prepared in advance. There are three ways, choose the one that suits you best:
- Peeled pumpkin can be boiled in salt water.
- Steam or microwave oven.
- Bake in the oven, wrapped in several layers of parchment and foil.
Any method is suitable, as long as the slices are soft, they can be easily mashed.

Ingredients for Pumpkin Cinnamon Casserole
- 400 g cooked pumpkin pulp;
- 2 eggs;
- 150 grams of sugar;
- 50 ml of olive oil;
- 150 g of flour;
- 50 g of semolina;
- 1 teaspoon baking powder;
- 1 teaspoon ground cinnamon;
- 1/3 of nutmeg;
- icing sugar, salt;
- 1 tablespoon of butter;
- sour cream and pumpkin marmalade for serving.
Method of cooking pumpkin casserole with cinnamon
Prepared pumpkin (boiled, baked) cool to room temperature, put the slices in the bowl of a blender.
Puree vegetables, pour fine sugar. The amount of sugar can be reduced or increased: the more sugar, the more crumbly will be the structure of the casserole.
Next, add a pinch of fine salt to balance the sweet taste and break up two large fresh eggs or three small ones.
Beat liquid ingredients for 3-4 minutes, then pour flour, semolina, baking powder and ground cinnamon. We rub nutmeg. In addition, you can add 2 pounded cloves, 2 boxes of cardamom and a little ground turmeric to enhance the bright yellow color.
Now, pour the first-quality high-quality olive oil or add melted and cooled melted oil.
Mix the ingredients thoroughly. The result is a smooth homogeneous dough without lumps. We leave it for 20 minutes, in the meantime we heat the oven to 170 degrees.
The form with a non-stick coating is greased with butter and sprinkled with flour, pour the dough for the casserole into the form.
Cooking a casserole in a water bath. In a large baking tray we put the form with a casserole, put everything in a preheated oven. Pour hot water into a large baking sheet so that it reaches about 1/2 of the casserole. Cook 45 minutes.
Cut the pumpkin casserole into portions, sprinkle with powdered sugar and ground cinnamon.
