Long seven weeks of Great Lent is not so easy to prepare delicious and varied dishes every day. You can include lean beet cutlets with apples and flax seeds in the fasting dinner menu or take it to work for a snack at lunch. Of course, the phrase “lean patties” is sad for many people, but it's not as bad as it seems. In the vegetarian menu, which is completely suitable for fasting days, recipes for delicious vegetable cutlets made from beets, carrots and legumes have long been invented, you just need to show imagination and add some healthy ingredients to vegetables and fruits, for example, flax seeds, sesame or nuts.
Since the eggs are banned on fast days, and the cutlets need to be tied up with something, instant oatmeal will come to our aid.

Ingredients for beet cutlets with apples and flax seeds
- 300 g of beets;
- 200 g sweet apples;
- 50 g of semolina;
- 60 grams of oatmeal;
- 3 teaspoons flaxseeds;
- black sesame, white sesame, green onions for serving.
Method of making beetroot cutlets with apples and flax seeds
Beetroot my brush, boil until done, then place for a few minutes in cold water. We clean the beets from the peel, rub on a large grater.
We add apples grated on a large grater to the beets, they can be peeled, but this is not necessary.
Add a pinch of salt and a pinch of sugar to the beets and apples, then pour the semolina and oatmeal. Ingredients mix thoroughly. A mixture of semolina and oatmeal successfully replaces the absence of eggs in the dough, in addition, these cereals make vegetable cutlets more satisfying.
Add flaxseeds to a bowl of beet dough, leave it for 15-20 minutes so that the semolina and oatmeal are soaked with juices and swollen, this will make the dough sticky and the cutlets will be easily molded.
We form small flat cutlets, roll them down in semolina. You can roll the patties in breadcrumbs or oatmeal, as you like.
Heat olive oil for frying in a pan with a non-stick coating, fry cutlets for 3 minutes on each side, then fold them into a pan with a thick bottom, cover with a lid and simmer for about 7 more minutes under the lid.
You can cook burgers in the oven. We cover the baking sheet with parchment, grease it with olive or vegetable oil, lay out the patties and bake for 25 minutes in an oven heated to 170 degrees.
Fry white sesame in a dry pan until golden brown, add a teaspoon of black sesame to it (just for beauty). Ready beet patties with apples and flax seeds are rolled in sesame, served to the table, sprinkle with green onions.
