Potato patties stuffed with mushrooms, beans and onions with sour cream sauce - an incredibly tasty and simple dish of inexpensive products. Any mushrooms like chanterelles, boletus mushrooms, saffron milk mushrooms, in a word, any forest gifts that we managed to collect are suitable for the filling. The main thing that they were edible. Mushrooms should be boiled in advance to readiness, fold to a sieve so that the filling does not turn out wet.
Beans can be canned, it saves time. I advise you to soak dry beans for a few hours in cold water before cooking.

Ingredients for potato cutlets with mushroom filling
- 700 g potatoes;
- 30 grams of wheat flour;
- 15 g potato starch;
- 1 egg;
- 30 g butter;
- 150 g onions;
- 150 g boiled mushrooms;
- 120 g canned beans;
- 200 g sour cream;
- 1 bunch of greens (dill and onion);
- cooking oil, salt, pepper.
Method of cooking potato patties with mushroom filling
Making stuffing for potato patties. Chop finely onions. Sprinkle the pan with vegetable oil, put the cream, then throw the onion, sprinkle with salt. Fry the onion until it becomes translucent and soft.
Roasted onion put in a deep bowl, sprinkle with pepper.
Chop boiled mushrooms finely, quickly fry in the same pan, in which the onions were fried. Shifts roasted mushrooms in a bowl.
I cooked potato cutlets with mushroom stuffing with mushroom platter - chanterelles, brown beet, boletus. Instead of forest mushrooms, mushrooms that are available all year round are quite suitable.
Pick up the canned beans on a sieve, rinse with boiled water, add to the bowl. You can boil dry beans, instead of using canned food. It will take about 2 hours, but no preservatives or food additives!
Knead the ingredients of the filling to make a thick gruel. No need to use a blender, just stretch the food with a fork.
Next, make potato dough. Boil peeled potatoes until cooked, turn into mashed potatoes, cool to room temperature.
Smash a raw chicken egg, mash wheat flour and potato starch, salt and knead the dough. Pour wheat flour on a chopping board, put two tablespoons of potato dough on the board, form a flat cake. Put the stuffing in the center of the flat cake, connect the edges, roll the chop in flour.
Heat the vegetable oil for frying in a pan. Putting potato patties with mushroom filling. Fry until golden brown on both sides. You can also bake them in the oven at 180 degrees Celsius.
Now we make the sauce. Finely chop a bunch of greens, green onions and dill are best combined with potatoes and mushrooms.
Sprinkle the chopped greens with salt, grind to make green juice stand out, then add sour cream.

Such a dish with small changes in the recipe can be cooked in the post. On fasting days, do not add an egg to the dough, but fill in a little more than potato starch and discard the sour cream in the sauce. By the way, sour cream can be replaced with soy yogurt.
