A quick leek and cheese pie is easy to make from dough on ordinary homemade yogurt or kefir. The dough is similar to pancake, but the consistency is thicker. This is an important point, because if baking soda is added to the dough, it should not be kept at room temperature for a long time - air bubbles formed from the contact of soda with sour kefir will disappear, baking will not be lush.

- 230 g sour milk;
- 3 chicken eggs;
- 180 g wheat flour;

Rinse a thick stalk of a leek with cold water, cut off the root lobe. There may be sand in the grooves of the leek leaves, so carefully examine the stem, rinse the leaves well if necessary.
Cut the washed onions into rings of 2-3 millimeters thick. The uppermost green leaves are best left for the broth, they are tough.

Next, we mix yogurt with fresh chicken eggs, whisk the ingredients with a whisk in just a minute, you just need to destroy the structure of the eggs.
Mix the flour for the cake with soda and baking powder, sift through a sieve, add to the liquid ingredients.
Pour olive or any vegetable oil into a bowl, knead the dough so that it is lump free.
Rosemary leaves are chopped finely. From the branches of thyme scrape leaves. Add herbs to the bowl. For such a quantity of ingredients, one teaspoon of chopped greens is enough, the aroma of herbs will be noticeable.
Now put in a bowl of fried and slightly cooled leek along with butter, in which it was fried. Hard cheese cut into cubes, send in a bowl after the onion.
The refractory mold with a non-stick coating is greased with a thin layer of butter, sprinkled with semolina or wheat flour. Put the dough in the form and send it to the oven heated to 185 degrees.
