Pumpkin pie on kefir with dried fruit is one of the simplest, inexpensive, but, nevertheless, beautiful pies, which is not a shame to serve not only for evening tea, but also on the festive table. Golden yellow inside, moderately sweet, slightly moist, with pieces of dried fruit and sour cream, it is eaten to crumb as it appears on the table.

Any dried fruit and candied fruits are suitable for decorating and filling - figs, dried apricots, dates, in general, show imagination, and at the same time clean your kitchen warehouse. It is no secret that in the kitchen cupboard there will always be jars with a handful of raisins or dried cranberries - anything can be added to this baking.

Ingredients for pumpkin pie on kefir with dried fruits
- 300 g pumpkin;
- 130 ml of kefir;
- 60 g butter;
- 130 g of granulated sugar;
- 2 chicken eggs;
- 100 g of corn flour;
- 150 g wheat flour;
- 1 teaspoon baking powder;
- 1/3 teaspoon of baking soda;
- 100 g dried apricots;
- 100 g dates;
- 1/3 of nutmeg;
- salt.
For pumpkin pie cream:
- 200 g of fat cream;
- 50 grams of granulated sugar;
- 30 g dried apricots;
- ground cinnamon.
Method of cooking pumpkin pie on kefir with dried fruit
We cut the pumpkin into parts, select the most ripe piece, remove the seeds, seed bag, cut off the peel.
For sweet pastries I advise you to use nutmeg. There are even cloying sweet vegetables, and this is the best choice.

Cut the pulp into cubes. Then we cook in any way convenient for you: steam, cook in a microwave oven or bake in the oven. Before baking the vegetables in the oven, pour them with olive or vegetable oil.
The pulp of the nutmeg in about 10-15 minutes of heat treatment will be ready.

Put slightly cooled vegetables in a blender, add granulated sugar, break eggs, pour 1/3 teaspoon of fine salt.

Pour the kefir, beat the mixture for a few minutes to dissolve the granulated sugar.

Mix the dry ingredients - pour in a bowl of corn and wheat flour, baking soda, baking powder.

Gradually add liquid ingredients to the dry ingredients, knead the dough. Melt the butter, and when it cools a little, add to the bowl. Knead the dough so that it is lump free.

Cut into cubes or thin strips of dried apricots and dates.

Add dried fruits to dough, mix well. If desired, you can soak the dried fruits in brandy about an hour before baking.

We rub finely nutmeg, for our pie it needs very little, with this spice it is impossible to overdo it.

Grease the form with butter, sprinkle with wheat flour, spread the dough.

Heat the oven to a temperature of 175 degrees Celsius, set the mold to an average level, cook the cake for 40 minutes. Ready-made pastries get out of shape, cool on a wire rack.

Mix fatty sour cream with sugar. Generously cover the top with a thick cream cream, sprinkle with finely chopped dried apricots and ground cinnamon.

Pumpkin pie with dried fruits can be immediately served at the table, but if the cake stays for an hour and is slightly soaked with sour cream, it will only taste better.
