Method of cooking yeast pizza with ham and pancetta in the oven
Pour wheat flour on the work surface, add fine, table salt without additives and dry yeast. We make a recess in the center and slowly pour into it pure water warmed to 35 degrees Celsius and olive oil of the first cold-pressed extra virgin variety. Mix the ingredients with your hands, then knead the dough until it stops gluing to the surface.
Lubricate the bowl with olive oil (so that the dough does not stick), put the bun in the bowl, cover with a clean, damp cloth and put it in a warm, secluded place without drafts.
Leave the bowl warm for 45-50 minutes, during which time the dough will double in volume.
We knead the dough, with a rolling pin, roll out a round cake on a board dusted with wheat flour to a thickness of about half a centimeter. Screw the tortilla on a rolling pin, transfer to a dry baking sheet.
In the circle of cakes with our fingers, we make a small rim, so that the juice from the filling does not flow onto the baking sheet. Lubricate the dough with tomato paste.
Fry the finely chopped onions in olive oil with thyme and salt. Cut the ham into thin slices, and pancetta - in small cubes.
Put the fried onion, ham and pancetta on the cake.
Mozzarella cheese cut into cubes or tear with hands, spread on a flat cake evenly. Cherry tomatoes cut into circles, also laid out across the pizza.
Add the finely chopped leek, basil and hard cheese grated on a large grater (the most tasty is Parmesan cheese).
Pour olive oil over pizza, sprinkle with thyme. We heat the oven to a temperature of 250 degrees Celsius.
We send yeast pizza with ham and pancetta into a hot oven for 12-15 minutes, then we take out and immediately remove from the pan on a dry board.
To the table yeast pizza with ham and pancetta is served hot. Enjoy your meal!
