It looks like a traditional cupcake or biscuit, but at the same time, the dough for cupcakes on kefir is much easier to prepare and not so capricious. The porous structure inherent in such baking is explained by the interaction of kefir, containing acid, and soda or baking powder.

In addition, you can use almost anything: raisins, candied fruits, fruits, berries, chocolate, jam, condensed milk. And in unsweetened keksfi on kefir you can add cheese, greens, sausage or bacon, spinach, boiled chicken and much more. Funny snacks are obtained by kneading tiny cauliflower blossoms into the dough. In general, it is always possible to supplement the recipe of muffins with kefir in molds with some additives. Just make sure that the additions are not too much: the dough can rise badly.
For baking cupcakes on kefir is best to use silicone molds. They can even not grease: baking is still easily removed from them. If there are no silicone molds, you can use metal ones, but then it’s better to put paper ones in them. This is also a good option. You can serve such baking right in a paper mold, which allows you to take such cupcakes with you on a picnic or on a trip, if you are not sure that you can wash your hands before eating: you can eat these cupcakes without touching them. Ready-made sweet cupcakes on kefir can be sprinkled with powdered sugar or covered with lipstick or icing. Beat eggs with sugar in a bowl (it is better to do this with a mixer, you can do it manually). Add soda, butter, vanilla sugar to the mixture and beat a little more. Now pour kefir, mix.
Sift flour, cocoa as well. Mix them together and gradually pour into the liquid mixture, stirring all the time. If this is not done, lumps may form, which then cause inconvenience.
Knead the dough with all the ingredients, mix the cherries into it (you can also add nuts or replace the cherries with other candied fruits or raisins).
Put a tablespoon of dough into molds so that they are filled only to the middle.
Bake in the oven at 180 degrees for about 25 minutes.
Recipe 2. Cupcakes on kefir with raisins and rum
This recipe for muffins on kefir in tins implies the use of strong alcohol, but this does not mean that children can not be given. In the process of baking, alcohol will evaporate, leaving only a pleasant smell. In extreme cases, if there is no rum, it can be replaced with a balm (like “Riga”) or brandy, but not vodka.

Kefir - half a cup
Cream 30% - half a cup
Flour - 2 glasses
Raisin - half a cup

Put oil in a warm place, when it becomes quite soft, put it in a bowl and beat with a mixer. Add sugar and vanilla sugar in it and beat again well.
Put eggs and yolks - all one at a time, beating well after each. Drive in also rum and vegetable oil.
In another bowl, mix the flour with starch and baking powder and raisins.
Add half of the dry mixture to the liquid mixture, add half of kefir (it should not be cold, it is even better to be warm), mix everything up. Then add the remaining dry mixture and the remaining kefir and beat well again.
Separately, you should whip the cream to “scallops”. Gently lay them in the dough and extremely gently mix with a spoon movements from the bottom up.
Spoon the dough in the molds until half, bake at 180 degrees for about 35-40 minutes.
Ready rum cupcakes can be sprinkled with powdered sugar.
Recipe 3. Cupcakes on yogurt in molds “Triple Chocolate”
Ingredients
Flour - glass
Egg - 1
Butter - 50 g + 50 g
Sugar - half a cup
Sugar powder - 100 g
Cocoa - 3 spoons “with a hill”
Kefir low-fat - 150 ml
Soda - pinch
Bitter chocolate - 100 g

Beat the butter (50 g) with sugar until frothy, add an egg to the same place and continue beating.
Pour a spoonful of cocoa and soda into the mixture, continue beating, add kefir and gradually fill the flour, without ceasing to beat the dough. When it is ready, prepare the molds, lubricate them if necessary with some oil.
Chocolate to break into pieces. Put a spoonful of dough into each mold, then a piece of chocolate, then again a spoonful of dough (or as needed to fill the molds to the middle. Put the cupcakes to bake at a temperature of 180 degrees for about 30 minutes.

Mayonnaise - 100 g

Ingredients
Apples hard and sweet (for example, Granny) - 3 pieces
Kefir - a glass
Egg - one
Hercules - 2 glasses
Any nuts chopped and lightly toasted - half a cup
Flour - glass
Sugar - half a cup
Baking Powder - Teaspoon

Please note: the dish is cooked in the microwave, which means that metal molds (except aluminum) will not work!

Eggs - 3 pieces
Kefir - a glass
Brynza (preferably hard) - 100 - 150 g
Soda - half a teaspoon

Cheese grate. If it is badly rubbed, you can slightly freeze it in the freezer.
Oil soften and beat with eggs. Add kefir, beat again. Stir the cheese and gradually add flour, all the time without stopping to beat the dough. Pour the soda, mix and spread on the molds no higher than the middle.
