Klemen with potatoes is a simple recipe according to which you can cook a tasty and inexpensive dish for a Sunday dinner or a festive table. On the market they sell the front and back pig shank at the same price. However, the back is more meaty, this part of the carcass is suitable for the recipe, the front one is used for cooking soups and brawn. The dish falls into the category - “put it on the stove and forgot”. Approximately half an hour before the end of boiling the shank, we put potatoes and carrots in the pan, and then all together we brown in the oven. If you like crispy pork skin, instead of mayonnaise, brush the meat before baking with honey and soy sauce glaze.

Ingredients for pork and potatoes
- 1 pork knuckle weighing 1.5 kg;
- 800 g potatoes;
- 200 g carrots;
- 1 head of garlic;
- 2 onions;
- 1 pod of chili;
- 1 parsley root;
- 2-3 celery stalks
- 1 bunch of dried celery;
- 4 bay leaves;
- 1 tsp. fennel seeds;
- 1 tsp. coriander;
- 2 tbsp. l mayonnaise;
- sunflower oil, salt, ground red and black pepper.
Method of cooking the shank with potatoes
Put the root of dried parsley on the bottom of a capacious soup pot, bay leaves with branches, add dried celery.

Wash the shank, scrape the skin, rinse again thoroughly with running cold water, put it in a saucepan on the spices. Small onion heads cut into several pieces. Onions do not need to be cleaned from the husk - the husk gives the broth a golden color. Garlic cloves clean, cut in half. Add the onion and garlic to the pot. Then pour cold water so that the meat is completely hidden under water. The water level should be several centimeters above meat.



Pour large table salt to taste, add fennel seeds and coriander, put the chili pepper.

Put celery stalks in a pan, close the lid tightly, put on the stove, bring to a boil. After boiling, remove the scum with a slotted spoon, reduce the gas to the minimum value, cook for 2 hours.

Peel raw potatoes, cut large tubers into two parts, and leave small ones intact. Scrape carrots, cut off the tips. Put the peeled vegetables in the pan 30 minutes before the end of cooking.

Then remove the pan from the stove, take out the meat and vegetables, spread on paper towels. Our knuckle with potatoes for the festive table is almost ready!
We bake the baking dish with sunflower oil, put the knuckle in the center of the mold, lay boiled vegetables around it. We grease the meat with mayonnaise, sprinkle with fennel and coriander, pour potatoes and carrots with sunflower oil.
Heat the oven to a temperature of 210 ° C.
We send the form with the knuckle in a hot oven for 30 minutes, during which time the knuckle and potatoes will be covered with a delicious golden crust.

To the table, pork and potatoes are served directly from the oven, before serving, we decorate with fresh greens. Enjoy your meal! And don’t forget to serve a cold beer to the knuckle!
