If you also wanted to try home-made cheese for a long time, but didn’t dare ... Then let's get together and cook it together. Do you think that cooking cheese at home is long and difficult? In fact, delicious cheese is prepared simply and in just a couple of hours. The main thing is to tune in (and try a little, since pulling out the cheese requires some effort), and you will have tasty, and most importantly, guaranteed healthy cheese. This is not a cheese product with a suspicious composition, with which the store shelves are full. The composition of our cheese includes only natural products: home-made cottage cheese and eggs, milk and butter.

  • 1 kg of cottage cheese;
  • 1-1, 5 l of milk;
  • 2 eggs;
  • 100-150 g, depending on the fat content of cottage cheese, butter;
  • 1 tsp. soda;
  • 1 tsp. salt.

Cooking cheese from homemade cottage cheese (from the store did not try). To make cheese a success, you need to choose only real cottage cheese of good quality.

Do you know how to distinguish cottage cheese from fake - curd mass? We take the package of cottage cheese, print it out and drip on it a couple of drops of iodine. If the cottage cheese became blue, it means that there is starch in it, and you should not eat this product. And if the cottage cheese remains brown, you can eat and use it to make homemade cheese.

We take a pan (not enameled), put cottage cheese into it, crush it smaller, and pour it over with milk. We put on a small fire. Stirring with a wooden spoon periodically, bring to a boil until the whey separates, but do not boil. So we remove the excess liquid from the curd to speed up the melting process.

Strain the curd mass through a colander, first lining it with gauze dipped in cold water (it is better to fold the gauze in several layers). We leave the mass to drain - let it stand for 5-10 minutes.

Using a meat grinder or blender, grind the resulting mass (the smaller, the better). We add soda to it - no more and no less than a teaspoon; then put salt and eggs. It is better to take homemade eggs with bright orange yolks, then the cheese will be delicious, yellow. And if the store eggs, you can add a little turmeric - useful spices bright sunny color.

Knead the mass well with your hands or with a silicone spatula.

Then there are two cooking options: in a water bath or in a saucepan with a thick bottom. Curd mass mixed with butter and put in a bowl, which we put on a pan of boiling water. We melt cheese for about 10-15 minutes, continuously stirring with a wooden spoon.

Then we start pulling out the contents of the bowl with a spoon - another 5-10 minutes until a homogeneous mass without lumps.

We shift the finished cheese into a mold lubricated with sunflower oil or butter, lightly tamp down to evenly distribute, and leave to cool.

Cooled cheese can be flipped from a bowl onto a plate. If it is not shaken out - slightly help with a hand or a spatula, the cheese already holds its shape well.
