Cake "Anthill" of crackers with custard and brandy - a simple and incredibly delicious homemade cake without baking. There are situations when you need to quickly cook a delicious dessert, and there is no time and desire to mess with baking. Ready-made flour products come to the rescue - all kinds of biscuit, sand and puff cakes, various cookies, gingerbread and even marshmallows. In this recipe, I use unsweetened crackers. The older generation, I think, remembers the cookie “Zoological” - small figures of little animals, the size of one bite. Here are these cookies and need for this dessert. To get as close as possible to the original taste of the anthill, you can take poppy crackers.
Then everything is simple - we prepare a thick custard, mix, decorate and send to the fridge for the night, or for as long as we have enough patience, as it is tasty and without tedious waiting. If you do not let the cake soak, then the cookies will crunch, and you will not be able to cut the cake, you will have to eat with a fork.

Ingredients for the quick cake “Anthill” without baking
- 400 g of small crackers (unsweetened);
- 1 glass of melted cream or milk;
- 1 cup of sugar;
- 200 g butter;
- 1 tablespoon of potato starch;
- 50 ml of cognac;
- 1 chicken egg;
- 1 bag of vanilla sugar;
- 1 \ 2 dark chocolate bar;
- pastry decorations.
Method of cooking the quick cake “Anthill” without baking
Making custard on melted cream. We break a large egg in a bowl, add a pinch of salt, granulated sugar, a bag of vanilla sugar. Glazed cream or milk mixed with corn starch.
Mix the ingredients with a whisk until sugar completely dissolves.
Next, heat the cream on low heat, stirring constantly, until it thickens. It is not necessary to bring to the boil, if there is a cooking thermometer, then we heat up to 85 degrees Celsius.
Remove the thickened cream from the stove, cool to room temperature. Small pieces add 160 grams of softened butter, whisk until fluffy. At this stage, it is better to whip the cream with an electric mixer, this is more productive. When the cream becomes lush, pour a thin stream of brandy, without stopping the mixer. Ready cream clean in the fridge for 15-20 minutes, so that it is well cooled and thickened.
Sprinkle the crackers in a deep bowl.
Mix crackers with cream. I advise you to add cookies in small portions, you may need a little more or a little less.
The result is a thick mass, similar to the classic anthill.
Put the mass on the plate, form a cone. If the cream turned out thick and enough cookies, then the mass perfectly keeps its shape.
In a water bath, melt dark chocolate with the remaining butter, cool, pour the cake.
We decorate the “Anthill” cake with confectionary dressing and put it in the fridge - let it soak until the guests arrive.
