Chokeberry is very useful, but not all hostesses are honored. The fact is that these berries have a tart, slightly bitter taste and do not all seem suitable for making desserts. In fact, black chokeberry jam, if cooked correctly, turns out to be very tasty, and tartness gives it a peculiar “zest”.

Compliance with the technology of making black chokeberry jam is a guarantee of its pleasant taste and long shelf life.
- To make jam, collect ripe mountain ash. It is necessary to sort it out in order to get rid of spoiled berries, and at the same time to clean the sticky leaves. Rowan should be washed thoroughly, even under a stream of water - it does not harm the berries.
- The skin of black chokeberry is rather thick, so before making jams of it, it is poured with boiling water for a while or even blanched for a few minutes in boiling water. This is necessary so that the berry can be soaked with syrup.
- Chokeberry has a bitter taste, so there is no need to spare sugar when preparing jam from it: it should be at least one and a half times more than berries.
- Prepared black chokeberry jam is laid out on sterilized jars. Only in this case, you can count on the fact that it does not deteriorate long enough, it will stand all winter.
Many people combine aronia with apples, oranges and other fruits. Gourmets say that in this case, the jam turns out much tastier.
A simple recipe for black chokeberry jam
Composition (for 2, 5 l):
- chokeberry - 1 kg;
- sugar - 1, 5 kg;
- water - 0, 25 l.
Method of preparation:
- Prepare the berries: sort, rinse well, remove the stem.
- Fold the rowan into a colander and dip it in boiling water.
- After 5-7 minutes, remove the colander with a berry, let it drain.
- Boil a glass of water and, adding a little sugar to it, boil a thick syrup.
- Dip mountain ash in boiling syrup and cook it over low heat, stirring for 12 minutes.
- Turn off the heat and leave the berry to cool for 3 hours.
- Bring the jam to a boil again and boil for 10 minutes, again leave it to cool for 3 hours.
- Bring jam to boil again and boil for 15 minutes.
- Spread the jam over pre-sterilized jars, tighten them tightly with lids.
- When the jam has cooled, store it in storage in the pantry or other place where you store supplies for the winter.
Simple black chokeberry jam can be stored at room temperature, after opening the can, it should be moved to the refrigerator.
Chokeberry Jam Jam with Apples
Composition (3 liters):
- chokeberry - 1 kg;
- apples - 0, 4 kg;
- water - 0, 5 l;
- sugar - 1, 5 kg;
- citric acid - 5 g;
- cinnamon - 5 g.
Method of preparation:
- Sort through, wash the berry. Dip in boiling water and blanch for 5 minutes. Take out the berries and lower for 5 minutes in cold water. Remove and drain again.
- From 0, 5 l of water and 0, 5 kg of sugar, cook syrup.
- Dip black chokeberry into the syrup, boil it 5 minutes after boiling and leave for 6 hours.
- Wash the apples, cut the seed box out of them. Cut the apples into small slices and dip them in boiling water. Boil apple slices in it until they are soft, then remove and place in a colander to drain excess water.
- In the tank where the black chokeberry in syrup is located, add the remaining sugar.
- Boil black chokeberry for half an hour.
- Add apple slices, boil for another 25 minutes.
- Add citric acid and cinnamon to the jam, stir.
- Cook the jam for another 5 minutes and place it in jars that need to be sterilized in advance.
- Close tightly with metal lids (you can use the usual ones, you can use screws with a key, you can use screws).
- After cooling, remove the jam for the winter.
Jam made of chokeberry with apples is sweet and sour with a pleasant tart flavor. Another advantage is the seductive aroma with notes of apples and cinnamon.
Chokeberry jam with oranges
Composition (for 3, 5 l):
- chokeberry - 1 kg;
- oranges - 0, 5 kg;
- lemons - 0, 3 kg;
- sugar - 2 kg;
- walnut kernels - 0, 2 kg.
Method of preparation:
- Wash and dry the selected berries, scroll through a meat grinder.
- Wash the oranges and lemons, put them in boiling water for 10 minutes, remove and rub them.
- Cut the oranges and lemons into large slices, remove the stones and, without peeling, rotate through the meat grinder.
- Crush walnut kernels. To do this, you can also use a meat grinder.
- Connect blackberry mashed potatoes, citrus fruits and nut mass. Mix well.
- Pour sugar into the mixture and set on low heat. After the mixture boils, boil it for 5-7 minutes, remove from heat.
- Without cooling, lay out on sterilized banks, seal them.
- Turn the jars of jam, wrap them with a blanket and leave them overnight.
- In the morning, remove the jam for storage. It can be put in the pantry, but it is better to keep it in a cool place, for example, in a cellar or a refrigerator.
Black chokeberry jam with oranges, lemons and walnuts is not only a tasty delicacy, but also a very useful product. It strengthens the immune system, helps fight anemia.
Blackberry jam “Five minutes”
Composition (3 liters):
- chokeberry - 1 kg;
- sugar - 2 kg.
Method of preparation:
- Pick and wash the berries. Dip them in boiling water for 5 minutes, remove from it and dry, laying out on a paper towel.
- Grind rowan in any way. The easiest way to do this is by scrolling the berry through a meat grinder, but you can use a blender.
- Pour crushed mountain ash with sugar, mix and put on low heat.
- Cook on a quiet fire, stirring, until boiling.
- After boiling, make a fire stronger and cook over high heat, stirring for 5 minutes.
- Spread over sterilized jars, cover them with lids until rolling.
- Lay a piece of cloth in a large saucepan (you can use a dish towel). Put jars of jam in there. Type in the pan water, so that it can be “on the shoulders”.
- Place the pot with the cans on a low fire. After boiling water in a saucepan, sterilize the jars for 20 minutes, if they are half-liter, 30 minutes, if they are liter, 15 minutes, if their capacity is less than half a liter.
- After removing the jars from the pan, roll them up. Leave to cool at room temperature.
Jam-five minutes is more useful than usual, as it undergoes less heat treatment and saves more vitamins. However, when the temperature in the room is high (above 18 degrees), such a delicacy is bad, it can deteriorate, therefore it is better to keep it in the refrigerator or basement.
Jam from chokeberry turns out very fragrant, especially if you make it with oranges or apples, it has a unique tart taste. This is a very useful dessert that will appeal even to children. It is worth spending a little time and effort to prepare such a delicacy - efforts will certainly pay off.
