Pancakes with kefir - delicious pancakes with mushrooms, olives and mortadella, which are easy to prepare in less than half an hour. There is not always time to cook yeast dough and turn on the oven, but sometimes it will want to eat a slice of pizza without leaving the house. In order not to go to the nearest pizzeria, the wise housewives came up with this recipe. Fritters like pizza is a great idea for a quick dinner or breakfast.
We use ready-made products as a filling: boiled sausage or ham, cheese, olives, dried tomatoes, and fried mushrooms. The filling can be varied. From my own experience - do not regret the ingredients, the more and more diverse, the tastier. However, reasonable limits in quantity should be, the proportion of dough filling should be observed at least approximately, so that the pancakes do not fall apart.

Ingredients for kefir fritters-pizza
- 2 chicken eggs;
- 200 ml of kefir;
- 250 g of wheat flour;
- 30 g butter;
- 1/2 tsp of soda;
- 1/2 tsp of baking powder;
- 30 grams of green pitted olives;
- 60 g hard cheese;
- 300 g of “Mortadella” boiled sausage;
- 100 g onions;
- 50 g leeks;
- 200 g of champignons;
- oregano, garlic, sweet paprika, olive oil, salt.
The way to make pizza fritters on kefir
First, prepare the mushrooms - in the heated olive or vegetable oil, fry finely chopped onions and leeks, then put the sliced mushrooms, fry until done, add salt, cool.
It is necessary to cool the mushrooms - add ingredients of room temperature to the dough.
Making the dough. In this recipe, the simplest dough on kefir, from which pancakes are usually baked.
So, pour kefir in a bowl, break two fresh chicken eggs.
Next, pour wheat flour, sifted with baking powder and soda, add a pinch of fine salt. Knead homogeneous dough without lumps.
Melt butter in a saucepan, cool, pour into a bowl with dough.
Butter can be replaced with olive oil (about 2 tablespoons).
Mortadella is cut into cubes slightly smaller than one centimeter in size. Put the sliced sausage in the dough.
Cut pitted green olives into thin ringlets, send them to the dough after the sausage.
Then put the mushrooms fried in onions in a bowl.
We rub hard cheese on a fine grater. Choose a variety of cheese according to your taste and wallet.
Now we pour seasonings - oregano, ground sweet paprika, pepper to taste. Mix the ingredients thoroughly - the dough for the fritters is ready.
Fry the pancakes in a well-heated pan in olive or vegetable oil until golden brown for several minutes on each side. Since all the ingredients of the filling are ready, it takes a little time to fry.
Before serving, sprinkle with grated cheese, you can also pour with ketchup or mayonnaise - as someone like. Enjoy your meal!
