Products for stewed meat cabbage
- White cabbage - 1/4 of a large head of cabbage or 1/2 small;
- Meat (pork, beef) - 300-400g;
- Onion - 1 large onion or 2-3 medium;
- Carrot - 1 large or a couple of medium;
- Tomato paste - 2 tbsp. l .;
- Salt - 0, 5 st. l or according to your taste;
- Black pepper-peas - 10-15 pcs .;
- Bay leaf - 1-2 pcs .;
- Sunflower oil.
How to cook cabbage with meat
It is most convenient to simmer cabbage in a large deep cast-iron frying pan. In the absence of such, you can take a cauldron or a pot with thick walls and a non-stick coating. In this case, fry the onions, carrots and meat in a skillet, and mix with the cabbage and cook further in the pan. Peel the onions and carrots, remove the top leaves from the cabbage; rinse and lightly dry the vegetables and meat.
Chop the onion finely, put it in the pan with sunflower oil and pass, stirring, until light transparency.
Add to the onions a carrot, grated on a large grater. Mix and pass together for 2-3 minutes.
Cut the meat into small pieces, add to the onions and carrots, mix and fry for a few minutes.
Then reduce the heat, cover the pan with a lid and roast vegetables with meat for 10-15 minutes. In the meantime we will chop cabbage.
Put the cabbage in the pan to the other ingredients and gently mix. If everything does not fit right away - wait a bit, let it stew for a couple of minutes under the lid. Cabbage will decrease in volume, and you can add more. Just do not make the gap too long, otherwise the first portion will be ready, and the second - still slightly raw.
You can pre-mash chopped cabbage with your hands with salt, but this is not necessary. And the main secret of delicious stewed cabbage - do not add water! Otherwise the dish will turn out watery. Cabbage juice and vegetable oil is enough that the stewed cabbage is not burnt and turned out soft.
Stew cabbage with meat, covered with a lid and stirring occasionally for 15-20 minutes (until soft). 5 minutes before readiness add a tomato, salt and mix. Fresh tomatoes are a good alternative to tomato paste.
In a couple of minutes we will put the spices: pepper-peas and bay leaf - you will immediately feel the delicious aroma!
Another 1-2 minutes, and the braised cabbage is ready - you can serve! It will be great in a company with mashed potatoes, boiled rice or pasta. As a separate dish, cabbage is also good. And you can cook it not only with meat, but also with mushrooms, with sausages, and even without any additives. Tasty in any way!
