Method of making cupcakes with filling and topping
We measure off the sugar, pour in the bowl of the mixer, then add the diced butter. We get the oil out of the refrigerator in advance so that it warms to room temperature.
Whip butter with sugar until the mass turns into a lush butter cream.
Eggs are also taken out of the refrigerator in advance so that they warm up to room temperature. One by one we break the eggs into the mixer bowl, beat them until fluffy.
We measure off the wheat flour, pour the dough baking powder and a pinch of fine salt. Cupcakes with their own hands baked from wheat flour of the highest grade or from whole grain wheat flour.
Pour corn starch and orange powder into the bowl. Orange peel powder can be replaced with a grated zest of two oranges.
Raisins are scalded with boiling water, dried on a paper towel. Mix dry and liquid ingredients so that you get a homogeneous dough without lumps, add scalded raisins to the dough.
Finely cut candied fruit. This time I added candied pineapple and candied pear.
Insert paper molds for muffins in silicone molds. This must be done so that kakpeyki with their own hands rose up, and not spreading wide.
We fill the molds with dough almost to the top, leave free 1/3 of the molds.
The oven is heated to a temperature of 175 degrees Celsius. We send pastries to a heated oven, cook for 25-30 minutes.
We melt bitter chocolate with butter in a water bath. Pour warm cupcakes with chocolate icing.
To decorate, finely chop the walnuts, cut candied fruit into cubes, put the raisins into boiling water for a minute, then dry them, sprinkle with brandy. Dried cranberries also sprinkle with brandy.
We decorate muffins with nuts and dried fruits, which easily stick to warm chocolate glaze.
We put decorated cupcakes in a festive box.
Bon appetit! Give loved ones sweets!
