Salad “New Year” with red fish and caviar will decorate any snack table, not only the main one of the year. There is no particular exotic in this dish - a little salty red fish, a bit of caviar, rich cream cheese, eggs, orange and, of course - mayonnaise. What a festive salad without him? For decoration, you will need a quail egg and a few green olives.
Any salted red fish - salmon, pink salmon, salmon or chum salmon is suitable for the recipe. I myself salted pink salmon in a Scandinavian recipe under a beet coat. It turned out tender, dark pink pink salmon, which is easy to cut into thin slices - convenient for cooking and sandwiches, and salads.
You can prepare this snack in advance, and decorate it right before serving, so that the caviar does not dry out, since with dried caviar the salad looks sad and unappetizing.

- 100 g salted red fish;
- 35 g red caviar;
- 80 g cream cheese;
- 100 g green olives;
- 1 small sweet and sour orange;

A way of cooking New Year's salad with red fish and caviar
Boil the eggs hard-boiled, cool, separate the white from the yolk.
Protein rubbed on a cheese grater, separated 2 \ 3. Spread protein on a serving plate, grease with mayonnaise.
Mayonnaise can be mixed with fat sour cream, a little salt and pepper.
On a layer of mayonnaise lay out all the egg yolk, grated on a small (cheese) grater. Mayonnaise in this salad is important - it fastens the layers, does not allow them to crumble.
Carefully, so that the yolk layer does not crumble, lubricate it with mayonnaise, and put the fish cut into thin slices on top.
Chop green olives finely, make the next layer, again, through the mayonnaise layer. By the way, olives stuffed with anchovy will suit this dish.
Cream cheese (I advise you to take a gentle and not very salty) rub a large, put on the olives.
Peel an orange from the peel, cut the slices - cut the pulp segments. Carefully clean the segments from the white skins. Cut the orange into cubes, spread on the cheese, smeared with mayonnaise. Orange is needed sweet and sour, be sure to try it, because a very sour fruit can spoil the taste of the dish.
Cover the orange layer with the remaining egg white, and you can decorate the salad.
Boil a hard-boiled quail egg. It will take only 2 minutes. The egg is cooled in ice water, clean.
Cut the olives into thin ringlets.
We spread red caviar in the middle of the circle, around the caviar circle we make a ring of olives.
In the center of the salad put a quail egg.
