Many hostesses on the eve of the New Year are anxious about finding original recipes for New Year salads for the festive table. I propose to make a simple and tasty appetizer, which consists of fish salad with salty biscuits. This New Year's fish salad can be served before the beginning of the holiday with an aperitif. Salty biscuits from rye flour with seeds are a good basis on which you can put a small portion of fish salad. Nowadays, a variety of shapes are being sold for Christmas cookies, I chose Christmas trees.

Ingredients for fish salad with celery and rye flour biscuits
For rye biscuits:
- 1 raw yolk;
- 100 g of rye flour;
- 45 g butter;
- 15 grams of oatmeal;
- 4 g of salt;
- 2 teaspoons of sunflower seeds;

For fish salad with celery:
- 2 small mackerel;
- 1 pickled cucumber;
- 8 quail eggs;
- 150 g of celery root;
- 50 g leeks;
- 100 g onions;
- 150 g melted cheese;
- 75 g of mayonnaise;
- 50 grams of olives;
- 50 green peas.
Method of cooking fish salad with celery and rye flour biscuits
First, make rye biscuits. For this butter (cold) cut into small cubes, add to it seeds, rye flour, oatmeal and yolk. Knead the dough with your hands until the ingredients are in a tight lump. Thinly roll out the dough on a floured board, cut out the form for Christmas tree cookies.
Place rye biscuits on a dry baking sheet, we pin it with a fork. There are quite a lot of butter in the chops, so the baking sheet does not need to be lubricated. We bake 12-16 minutes. Baking temperature 170 degrees Celsius.
We clean two small mackerels from viscera, cut off the heads, boil 15 minutes in salted water with roots and spices, cool, cleanse from the bones. Mix ready mackerel with onion fried in butter.
Peel off a small piece of celery root, rub on a large grater, fry in vegetable oil for 5 minutes, add to mackerel and onion.
While the fish and vegetables have not cooled down, add melted cheese cut into large pieces in the salad. In a warm salad, the cheese will melt and be evenly distributed between the other ingredients.

Add boiled and finely chopped quail eggs, sliced leek, peas, sliced olives and mayonnaise into fish salad.
I advise you to season fish salad with homemade mayonnaise, the taste will be just delicious. Homemade mayonnaise does not contain preservatives, there are no chemical additives, besides, you can independently adjust the amount of salt and sugar.
Mix all the ingredients of fish salad, if necessary, add salt, lay out fish salad slide on a serving plate. We decorate a salad hill with parsley, black olives halves.
