Tasty navaga in the oven is a simple and affordable dish made from inexpensive, but very tasty sea fish. The fish under the marinade almost always turns out to be tasty, there are no special secrets here, it is important to observe the taste proportions of salty, sour and sweet when cooking vegetable marinade. In this recipe I cook fish under the marinade with a ridge. For the festive table I advise you to work a little, to get the fish ridge and cook the fillet on the skin so that guests do not bother with bones and eat a tasty dish for both cheeks!
Navaga is a fish from the cod family, therefore, it has a very similar cod taste. In navaga, as well as in cod, there are few bones, the meat is white, dense, juicy and tasty.
Any fish needs to be cooked quickly in order to preserve the taste and benefit as much as possible; it is enough to fry for a few minutes and bake in the oven for 8-10 minutes.

Ingredients for navaga under mariande in the oven
- 500 g of navaga fish;
- 130 g leek;
- 150 g carrots;
- 80 g celery;
- 15 g of soy sauce;
- 20 g of wine vinegar;
- 25 grams of granulated sugar;
- wheat flour, sea salt, vegetable oil.
Method of cooking fish navaga under marinade
1-2 hours before cooking we take the fish out of the freezer, put it in a bowl with cold water, rinse well. To clean the navaga, tricky devices are not needed, it is enough to have cooking scissors and a knife for cleaning scales. So, we clean the scales, then we make an incision along the abdomen, we reach the inside. If you're lucky, there will be caviar inside.
Along the ridge from the bottom there is a sinus filled with dark mass, it should be cut and carefully cleaned. Once again, clean the cleaned fish with running water.
Now we cut fish carcasses into portions. Medium-sized fish cut into 3-4 pieces.
Pour a few tablespoons of wheat flour on a plate, add sea salt to taste, mix. We pan fish pieces and caviar in flour from all sides.
In a frying pan, heat refined vegetable oil for frying, quickly fry on both sides until golden brown.
We clean the carrots, rub them on a large vegetable grater, or cut them into thin strips. The light part of the stem of the leek we cut rings. Celery cut into small cubes. Lubricate the baking dish with oil, lay out the fried pieces of fish. Pass in vegetable oil chopped leek, grated carrot and celery cubes until soft. At the end, pour wine vinegar, soy sauce, pour sugar and salt to taste, simmer the seasoned vegetables for another 3-4 minutes.
Put the vegetables on top of pieces of navaga fish, pour over the sauce from the pan. The oven is heated to 180 degrees. We put the form in a heated cupboard, bake for 8-10 minutes.
We get the fish nabag under the marinade out of the oven, sprinkle with finely chopped onion and serve to the table with mashed potatoes or rice. Enjoy your meal!
