I love English cuisine very much, and especially unsweetened dough dishes - puddings and pies. Baked kidney pudding, which I suggest you cook, is somewhat different from the classic recipe, but the result exceeds expectations. We will not cook the pudding for several hours in a saucepan with water, as using the oven this dish can be obtained much faster. Yes, and the kidneys do not need to boil for several hours, soaking them for 24 hours a day - leave these prejudices to our grandmothers. But to heat the kidney fat do not be lazy, classic British pudding can be cooked only with it, because without kidney fat the dough will be completely different.
You can add mushrooms, pieces of roasted beef to the pudding, or, as in ancient British recipes, enrich its taste with several oysters. You can make white mushroom sauce on beef broth and pour it on the finished pudding.

Ingredients for kidney pudding:
- 1 kg of beef kidneys
- 2 red bulbs
- 3 tablespoons finely chopped parsley
- 2 eggs
- 30 grams of wheat flour
- 1 tablespoon of cornstarch
- 150 ml of milk
Cooking pudding with kidneys.
One fairly large beef kidney weighs about a kilogram. We wash the kidney with running water. Put in a pan with fresh, cold water. Water periodically change. Soak 2 hours.
The soaked buds are divided into lobules. In the middle of the kidney you will find quite large deposits of kidney fat and ducts. Fat must be carefully cut, it is useful. You can, of course, instead of kidney fat cook pudding with butter, but the taste will not be the same.
Cut the kidney fat into small cubes, put in a greased saucepan. We melt the fat on the smallest fire. Get about 60-70 grams of pure fat, which, when it cools, is useful for the test.
Put the kidney into slices in cold water, add any spices: garlic, greens, pepper, bay leaf and salt (it is important, always cook offal in plenty of water). Boil the kidneys for 10 minutes, after boiling, and then throw them in a colander and rinse with cold water. We filter the kidney fat to remove the greaves. So, ready-made semi-finished products for our pudding.
In a tablespoon of kidney fat, fry red onions, cut the kidneys into small slices. Putting kidney, onion and parsley in a renal-greased form.
Cooking dough. Mix two raw eggs and the remaining kidney fat, add flour, salt, starch and milk. The dough will be quite liquid, mix it thoroughly, so that small lumps disappear.
Fill the kidneys with liquid dough. Make sure that the form was not filled to the brim, as the pudding rises in the oven and can "break the banks."
Preheat oven to 160 degrees and bake pudding with kidneys for about 20-25 minutes on the middle shelf.
Ready pudding with kidneys can be eaten hot, but it is very tasty and cold. If the pudding is completely cooled, it can be cut into neat portions.
