Potato zrazy with mushrooms - the recipe is simple, but wonderful because it helps to turn the remnants of yesterday's meal into a new dish. Fresh mashed potatoes - lush, tasty - in the morning is not so appetizing. But yesterday's potatoes are an excellent basis for making fresh, hot, tasty potato zrazy with mushrooms.
If there is no puree yesterday, and you want to make zrazy, you can boil several potatoes on purpose. Zrazy can be made with a variety of fillings: with meat, with egg and pickles, with cabbage, and we suggest you to try potato zrazy with champignons today.
Ingredients for potato zraz with mushrooms
For potato dough
- 5-7 medium potatoes;
- 1 egg;
- A pinch of salt, ground black pepper to taste;
- 4 tablespoons of flour + on the roll.
For the mushroom filling
- 150 g of fresh champignons;
- 1 small onion;
- Salt, pepper;
- Sunflower oil for frying.
Method of cooking potato zrazov with mushrooms
Wash the potatoes, peel and boil until soft in salted water; then we will merge water, and we will shake potatoes, as on mashed potatoes. If you already have mashed potatoes, skip these manipulations.
In the mashed potatoes, break the egg, add flour, salt, pepper and knead thoroughly. Potato mass for zraz ready, now prepare the filling. Peel the onions, chop finely and start to fry in a heated pan with sunflower oil. Fry on medium light, stirring occasionally with a spoon.
Clean the champignons from the skins, wash them, dry them slightly, cut them into plates and add to the onions. Salt, pepper and continue to fry together until light rosy. Put the finished stuffing in the plate, trying to keep the butter in the pan.
It's time to sculpt zrazy! Let's form a sausage from potato mass, roll in flour from all sides. On a floured plate, we cut the sausage into mugs about 1.5 cm thick.
We will make flat cakes from the circles, in the middle of which we will spread a little mushroom filling. Make sure that the filling does not fall on the edges of the circles - then fatty edges will be difficult to close up.
Fill up the zrazy like dumplings, flatten a little and roll well in flour. Preheat the sunflower oil and put zrazy on a hot frying pan.
Fry on the fire more than average for 2-3 minutes, until golden brown, then turn it with a fork to the other side and fry for another couple of minutes.
Ready zrazy remove with a spatula on the dish.
