Zrazy with an egg is a dish that is present in Belarusian, Ukrainian, Polish and Lithuanian cuisine. It is a cutlet or roll filled with boiled egg.

Zrazy with egg in the oven - the basic principles of cooking

Traditional zrazy cooked from any meat. There are two ways of cooking meat zraz. In the first case, the meat is twisted into mince, make a cake from it and put in the center a stuffed egg. Then form a round or oval cutlet and breaded it in breadcrumbs. In the second case, the fillet is cut into thin slices, slightly beat it off and wrap egg stuffing in it.

Eggs for the filling boiled hard boiled. You can put it whole and wrap with minced meat, or finely chop it up. A finely chopped egg for the filling can be combined with onions, mushrooms, cheese or vegetables.

In addition, zrazy can be prepared not only from meat, but also from fish, vegetables and even cereals.

Formed zrazy are fried in hot oil, boiled, and steamed or in the oven.

Serve zrazy with sauce, in the broth in which they are cooked, with a side dish or fresh vegetables.

Recipe 1. Meat zrazy with egg in the oven

Ingredients

1 kg 500 g pork fillet;

15 ml of vegetable oil;

a dozen eggs;

150 ml of mayonnaise;

100 g onions;

two bunches of green onions;

150 grams of potatoes;

sea ​​salt and pepper freshly ground.

Method of preparation

1. Wash the pork under the tap, dry and cut into pieces. Twist the meat in a meat grinder. Peel and chop the potatoes and onions using a meat grinder. Combine vegetables and meat in a bowl. Beat in the egg and knead well. Pepper, salt and mix again. Leave the mince to rest for half an hour.

2. Boil the rest of the eggs, cool, peel and crumble. Rinse green onions, shake off excess moisture and chop into thin rings. 3. Combine eggs with green onions. Add mayonnaise and mix.

4. Separate about a spoonful of minced meat. Form a ball out of it, and then flatten it into a tortilla. Put a little stuffing in the middle and connect the edges, forming a patty.

5. Cover the baking sheet with baking paper and grease it with vegetable oil. Spread zrazy and send in the oven for 15 minutes. Cook at 200C. Then remove the pan, turn the zrazy and bake for the same amount of time.

Recipe 2. Zrazy with an egg in the oven under a cheese-mustard crust

Ingredients

Minced meat

two kilograms of pork;

sea ​​salt;

Half a kilo of bacon with meat layers;

black pepper;

two large onions;

three eggs;

garlic - five cloves.

Stuffing

four eggs;

200 grams of cheese;

50 g butter;

120 g mustard.

Method of preparation

1. Pork lard and rinse meat, peel off the films and cut into chunks. Free onions and garlic from the husk. Grind pork, lard, garlic and onions in a meat grinder. In the minced meat, beat three eggs, pepper, salt and knead well.

2. Boil eggs for the filling for five minutes, then cool under cold running water, peel and chop on a grater with large holes. Butter hold for ten minutes in the freezer. Then grind as well as eggs. Combine the butter with the eggs, lightly salt and mix.

3. Take a small amount of minced meat and knead on a palm into a flat cake. In the center, put a couple of teaspoons of egg filling and form immediately.

Recipe 3. Fish zrazy with egg in the oven

Ingredients

minced fish - half a kilogram;

black pepper;

four eggs;

a few sprigs of parsley;

salt;

breadcrumbs - 120 g;

vegetable oil;

garlic three cloves;

dried basil.

Method of preparation

1. Place eggs in a saucepan, cover with water and boil for about ten minutes.

2. Put the minced fish in a cup, put the breadcrumbs in it and beat the egg. Salt and season with spices. Knead minced meat and leave it to rest for half an hour.

3. Peel and chop the onion into thin slices. Pour it into the pan with the heated oil and fry until golden brown. Add the garlic passed through the press and then literally a minute. Cool it down. Stir in minced meat and mix until smooth.

4. Peel the boiled eggs, and cut each into four pieces.

Ingredients

400 g of pork and ground beef;

300 g white cabbage;

Method of preparation

1. Cabbage chop thin strips. Crumble one peeled onion finely. Put the cabbage in a preheated pan with butter and fry until soft. Then add onions and continue to fry until ruddy.

2. Boil the eggs hard, cool, peel and crumble. Add them to roasted cabbage and mix.

3. Crumble the second cleaned onion and garlic as small as possible. Add to the mince, pepper, salt and pour 100 ml of ice water. Mix everything quickly until smooth. 4. Gently fasten the edges, form an oval cutlet, grind in flour and fry until it is ruddy on both sides.

Ingredients

800 g of mixed minced meat;

30 grams of flour;

two thirds cup of dried mushrooms;

5 ml of tomato sauce;

boiled egg;

100 g sour cream;

salt;

vegetable oil;

5 g sweet paprika;

70 g butter;

8 g black pepper;

Method of preparation

1. Peel and finely chop the onion. In the mince, add a loaf soaked in water, two tablespoons of sour cream and chopped onion. Salt, season with paprika and black pepper. Knead the mince thoroughly with your hands until smooth.

2. Wash dried mushrooms and boil for half an hour. Throw the mushrooms in a sieve. Pour broth into a glass and set aside. Boiled mushrooms finely crumble.
