A pie is a pastry made from yeast dough with a filling, the center of which is left open or, as they say, unbuttoned. Usually, melted butter or hot broth is poured into this hole before serving. Pies with minced meat cooked in the oven according to this recipe are very tasty, their delicious aroma will fill your kitchen and will not leave anyone indifferent in the house.

It is not difficult to make unsweetened baked goods made from yeast dough, I think that even home cooks will be able to make pies with this recipe.

Ingredients for meat pies
Yeast dough:
- 300 g of wheat flour in \ s;
- 20 g of pressed yeast;
- 185 ml of milk;
- 3 g of fine salt;
- 3 g of granulated sugar;
- 35 ml of olive oil;
- egg yolk.
Stuffing:
- 350 g of minced meat;
- 200 g onions;
- 200 g carrots;
- 100 g green onions;
- chili pepper, salt, vegetable oil for frying;
- meat broth for serving.
Method of cooking meat pies
Wheat flour of the highest grade, sometimes called refined, is mixed with fine salt, sifted into a deep bowl through a fine sieve so that the flour is saturated with oxygen.
Heat up to 32 degrees milk, dissolve a piece of fresh yeast, pour sugar.
Add in a bowl of flour yeast diluted in milk.

Stir flour with milk, gradually pour olive oil.

Put the dough on a cutting board or other work surface, knead the dough for about 10 minutes until it stops sticking to the surface and hands.

We grease the bowl with olive oil, put the dough in, cover with a damp cloth, remove to a warm, protected from the draft, place for 45 minutes.

While the dough rises, we make the filling. In a pan, heat 2-3 tablespoons of refined vegetable oil for frying. Pass 12-15 minutes of finely chopped onions and a carrot grated on a large grater.

Separately, fry in a minced meat pan for about 3-4 minutes. The filling will be tastier if mixed in equal proportions beef and pork mince. Add roasted minced meat to onions with carrots.

Seasoning stuffing: add a finely chopped bunch of green onions, chili pepper, to taste with salt and black pepper. We remove in the refrigerator so that it is cooled.

Divide the dough into 9-10 identical pieces weighing about 60 g each. Roll out round tortillas on a floured surface.

In the center of each of them we put the stuffing, make pies in the shape of boats, leave the stuffing in the center.

Put the patties on a dry pan. Mix raw egg yolk with cold water, lubricate the dough. Leave the baking sheet in a warm place for 45-50 minutes so that the pies come up.

Heat up to 220 degrees oven. We put the baking sheet on the middle shelf of the hot oven. Bake for 15-17 minutes until golden brown.
Lay the finished meat pies on the board, cover with a clean dishcloth.

We serve meat pies with hot meat broth, in the center of each pie we pour a few spoons of hot broth - that is the tradition! Enjoy your meal!
