Classic sorcerers from potatoes with minced meat in the oven: general rules
There is one basic recipe for baked potato wizards with filling. According to it, with some differences, prepare the other variations of the dish.
The procedure is as follows:
1. Potatoes, as well as other vegetables used in the recipe, are peeled and washed.
2. Potato rubbed on a very fine grater. Or (the second option) is boiled, cooled and crushed in a convenient way into mush.
3. Potato "dough" give the taste, salt and pepper it.
4. The meat for the filling is stripped of films, tendons, excess fat. Wash, dry, cut into pieces. Crushed into mince with a meat grinder, chopper or re finely chopped with a knife.
5. In the minced meat they mix raw or sauteed onions (finely chopped), salt, seasonings, and pepper. Knead well and knock out a lot.
6. Wizards form hands. Take a small piece of potato mass in the palm, flatten it into a flat cake, put a ball of filling in the middle. Dough lifted from the edges up and pinch gently.
7. Billets give oval or round, slightly flattened bottom and top shape. Roll in flour or small breadcrumbs.

The principle common to all recipes is that the potato “dough” must be sufficiently dense and plastic so that the products during the heat treatment keep their shape well. This is achieved in two ways.
The first method, traditional for Belarusian cuisine, is mixing starch extracted with grated juice into grated raw potatoes. For this, the potato mass is wrapped in a double layer of gauze and squeezed like cottage cheese. The juice that has flowed into the bowl after 15-20 minutes is drained from the starch that has settled to the bottom. The starch itself is mixed into grated potatoes and the dough is allowed to rest for 15 minutes.
The second, more common and convenient way to make potato dough for witches plastic - add an egg to it. To the mass was not liquid, potato chips are mixed with wheat flour. This rule is the same for both raw and cooked potatoes.
Sorcerers from potatoes with minced meat in sour cream under a cheese crust in the oven

3. Beat the second egg in the mince, add salt, spices (optional), pepper. Stir and beat the stuffing.
4. Form sorcerers with filling. Fry on both sides or immediately put in a heat-resistant container.
5. For the sauce mix chopped garlic, grated finely carrots, chopped dill, mayonnaise, sour cream. If the mass is too thick, dilute it with water. Salt to taste. 6. Sorcerers pour sour cream sauce. Top wipe with cheese.
Bake 30 minutes at 180 degrees.
Lazy sorcerers in the oven of potatoes with minced turkey
Lazy sorcerers are prepared in the same way as meatballs. But the taste is completely different due to the mixing of all the ingredients in the dough and creamy tomato sauce, in which the dish is stewed.
Per 1 kg of potatoes:
· 500 g turkey minced meat;
· 1 large onion;
· 1 carrot;
· clove of garlic;
· 2 eggs;
· 2 tbsp. l flour;
· 100 g of tomato juice;
· 200 g low-fat cream;
· 100 g of hard cheese;
· Salt, spices, pepper;
· Vegetable oil.
Recipe:
1. Combine the grated (drained) potatoes with minced meat, eggs, flour, and finely chopped onions. Pepper, season with spices, salt. Stir well.
2. Form sorcerers. Put in a deep pan, greased with sunflower oil.
3. Tomato juice mixed with cream and chopped garlic. Salt and season with spices.
4. Lazy sorcerers pour creamy tomato sauce. Sprinkle with grated cheese.
Bake 40-50 minutes at 180 degrees.
Sorcerers from potatoes with stuffed veal and cabbage
It will take a little more time and effort to prepare this wizard. However, it is worth a try. The dish turns out beautiful in appearance, tasty and juicy, but it also contains fewer calories.
For 1500 g potatoes:
· 500 g of ground beef;
· 500 g white cabbage;
· 1 onion;
· 1 egg;
· 2 tbsp. l flour;
· 200 g of 25% sour cream;
· 50 ml of vegetable oil;
· Salt, cumin seeds, pepper - to taste;
· Dill, parsley.
Recipe:
1. Divide the peeled onion in half. One part cut into half rings, the second to rub on a grater.
2. Shred the cabbage as small as possible.
3. Fry onion in vegetable oil until golden in color in a pan.
4. Add cabbage, mix. Simmer on low heat for 10 minutes. Cool it down.
5. Mix the stewed cabbage with minced meat, chopped greens, cumin, half sour cream. Add salt, spices, pepper. Knock stuffing.
6. Add the flour, the egg, and the other half of the onion to the potato chips, strained and mixed with the starch. Salt, knead the dough. 7. Form and put in a heat-resistant form (lubricate with a bit of oil) sorcerers stuffed with minced meat and cabbage. Lubricate the top of each sorcerer with the remaining sour cream.
Bake for half an hour at 200 degrees.
Baked sorcerers from boiled potatoes with minced crab sticks
The original sweetish filling in a delicate potato shell is unusual in itself. The dish will surprise adults, and thanks to its neat shape and delicious “surprise”, children will love it very much.
For 600 g potatoes:
· 240 g of crab sticks;
· 2 eggs;
· 2 carrots;
· 100 hard cheese;
· Salt, spices;
· Flour;
· vegetable oil.
Recipe:
1. Boiled potatoes in salted water. Cool, chop into gruel or rub on a grater.
2. Add in mashed eggs, pepper, salt. Mix.
3. Crab sticks chop finely. Mix with grated carrots and cheese chips.
4. Form small potato balls from the potato mass.
5. Roll sorcerers in flour, fry in a pan in vegetable oil.
6. Transfer to a baking sheet, drizzled with oil. Cover with food foil.
7. Put the sorcerers in an oven heated to 180 degrees. After 20 minutes, remove the foil, continue to bake the dish for another 15 minutes.
Serve under natural yoghurt sauce with chopped warm greens.
Potato-carrot sorcerers with minced meat in the oven
Potatoes mixed with carrots, after roasting, acquire a very appetizing golden-orange color. Stuffing of minced chicken with herbs turns juicy, great taste.
For 1.5 kg of potatoes:
· 3 carrots;
· 500 grams of minced chicken;
· 2 eggs;
· Bunch of green onions;
· A bunch of dill with parsley;
· 2 tbsp. water;
· Vegetable oil;
· Salt, spices, pepper.
Recipe:
1. Grate vegetables. Mix it up. Strain the juice.
2. Salt, add spices to taste. Beat the eggs. Knead soft vegetable dough. If the mass is liquid, add some flour or semolina.
3. Mix minced chicken with chopped greens, salt, pepper, spices.
4. Form and roast the sorcerers on both sides. Fold in the cauldron.
5. Fill half with water. Bake at 160 degrees for 40 minutes. Serve with sour cream. For beauty, you can sprinkle carrot-potato sorcerers with minced finely chopped dill.
Good advice
It is best to do the stuffing for the sorcerers from the potatoes in the oven by yourself, rather than buying ready-made in the store. Meat types that are more suitable for this dish - chicken, turkey, veal, lean pork, beef.
Meat can traditionally be minced. But it is better to chop it finely with a knife - so the filling will be much juicier. To make the stuffing more tender, add a little sour cream or melted butter.
Before wrapping the mince into the potato mass, you need to let it rest for about 15 minutes. The meat will be saturated with salt and spices, after which it should be mixed and knocked out again.
Vegetables make brighter and more saturated taste of potato sorcerers. In the dough, you can add not only the traditional onions and carrots, but also zucchini, pumpkin. Well potato dough is combined with chopped garlic, chopped dill, boiled rice.
Mushrooms in sorcerers can be used fresh and dry. They are pre-fried and twisted in a meat grinder. From this component, you can make an independent filling for baked sorcerers, or mixed into minced meat.
