Gentle razvaristaya dumpling for good reason became a successful Ukrainian brand, and soup with dumplings, which is rarely seen in the restaurant menu, is a real symbol of home cooking. This makes it easy to prepare, extraordinary nutritional value and excellent taste.

Broth based on smoked ribs will make the dish simply unforgettable. But in their absence, small pieces of smoked meat can be added directly to the dough. It can be rolled out and cut into squares, as well as rolled into small balls. Any flour is suitable for kneading.

A fragrant soup with fresh herbs and large carrot slices is served hot.

Ingredients Required:

  • 2, 5 l of water;
  • 700 g potatoes;
  • 200 g carrots;
  • 115 g onions;
  • 300 g smoked ribs;
  • 3 tbsp. l sunflower oil;
  • 2 bay leaves;
  • salt to taste;
  • ground black pepper to taste;
  • 5 sprigs of dill.

Dough for dumplings:

  • 2 chicken eggs;
  • 0, 5 tsp. salts;
  • 150 g wheat flour;
  • 0, 5 tsp. dried dill;
  • 0, 5 tsp. dried parsley.

Cooking

1. To start, make a broth of smoked ribs. Add ribs to the pan, pour the right amount of water. Put on a strong fire. Bring to a boil. Cook on low heat for 30-40 minutes.

2. Rinse the potatoes thoroughly. Peel off. Cut into small cubes. After 30-40 minutes, add the potatoes in a fragrant broth. Ribs can not be removed. Bring to a boil.

3. Peel the onions, cut into small slices. Rinse the carrot, remove the skin. Rub on a medium grater. Fry in heated sunflower oil until soft on low heat.

4. When the potatoes boil, add the fried vegetables. Stir and boil potatoes until tender.

5. In the meantime, prepare the dough for dumplings. In deep dishes, sift wheat flour. Add salt, parsley, dill. Smash the chicken egg. Start the batch by gradually adding warm water. Knead the dough, not sticky to the hands.

6. With your hands, pinch off small pieces of dough of any size.

7. When all the vegetables in the soup are ready, add the dumplings. Stir. Season with bay leaf, salt, and ground black pepper. Boil until cooked dumplings. Boil for 5-10 minutes after the dumplings float to the surface.
