What to cook at first? Every housewife asks herself this question almost every day, who tries to feed her household and is tasty and healthy. Try the delicious and easy-to-make pickle soup with meatballs. Salted cucumbers give a particularly appetizing taste to this soup; therefore, adults also like pickle, and even kids, who usually don't want to look at the first course. You can cook pickle on vegetable, meat or chicken broth, and you can - with meatballs, as in our today's recipe.
Ingredients for pickle for 2-3 liters of water
- 2-3 medium sized potatoes;
- 1 small carrot;
- 1 medium onion;
- 2-3 pickles;
- half a cup of rice;
- 200 g of minced meat (beef, pork or chicken will do);
- a few feathers of green onions, dill sprigs and parsley;
- salt to taste;
- zazharki sunflower oil.
From the spices you can put pepper-peas and a couple of bay leaves - but pickle and without spices will be tasty.
Method of cooking pickle with meatballs
All vegetables are clean and wash, wash rice 1-2 times in cold water. Dice the potatoes, chop the onions, and carrot and three cucumbers for a large grater.
First of all, put potatoes and rice in boiled water, let them boil under a lid over medium heat. Only slightly move the lid to the side: the rice tends to run out of a tightly closed pan. And stir the soup from time to time. Cooking fry. In a frying pan with heated sunflower oil, pass over the onion (fry lightly until translucent). Add the carrot and continue, stirring gently, browning until soft.
Put a fry in a saucepan with potatoes and rice - the soup will instantly get an appetizing, golden color!
Note: if you want a dietary version of the soup, you can cook without zazharki, but simply add carrot slices and onion to the pan (chopped or, if you do not like boiled onions, - whole which you can then catch). And so that the soup without zazharki turned out tasty, cook it not on water, but on broth.
When the soup starts to boil again, with hands dipped in water, we form small balls (as large as a walnut) with salted minced meat and put them in the soup.
After the meatballs, add the salted cucumbers, stir the soup and try on the salt. And then dosalivaem to taste.
Let the soup leave for 5-7 minutes on a small light so that the meatballs do not boil soft. Then add chopped greens. 2 more minutes - and the pickle with meatballs is ready!
Serve pickle deliciously with sour cream, black bread and slices of pickled cucumbers.
