Meat pork salad with mushrooms is a rural dish that can often be found on a festive table in the village. This recipe with mushrooms, but if there is an opportunity to replace mushrooms with forest mushrooms, be sure to cook it, it will be even tastier.
The process of cooking a salad with pork and mushrooms is very simple and consists of three main steps. First, cook the meat with spices, at the end of cooking add the champignons. Then grind the ingredients and season. Finished snack is removed in the refrigerator for 8-10 hours, and better at night, so that the meat is pickled in onions and spices. The next day, the appetizer is ready, the main thing is to dober up to the holiday!

Ingredients for Salad with Pork and Country Mushrooms
- 1 kg of boneless pork;
- 400 g of champignons;
- 250 g red onions;
- 120 ml of apple cider vinegar;
- 15 g of fine granulated sugar;
- 1 teaspoon ground black pepper;
- 1 bunch of parsley;
- 100 ml of olive oil;
- salt to taste.

The way of preparing a hearty salad with pork and mushrooms in a rustic way
Rice large pieces of pork for salad salad rinsed with running water, put in a saucepan. In addition to meat, I still add a small piece of pork skin without fat. This, of course, an amateur, for example, I like it, but everyone has different tastes.
Put the green part of the leek stem on the pot, add a teaspoon of fennel seeds, two pods of dried chili pepper, a few crushed garlic cloves, bay leaves, salt to taste and filtered water.
Over high heat bring to a boil, remove scale with a slotted spoon, then reduce the gas. Cook on low heat until cooked meat (about 1-1.5 hours).
Mushrooms are wiped with a damp cloth, large mushrooms are cut in half, small ones are left intact.
By the way, if the mushrooms are dirty, with traces of soil, then you need to wash them thoroughly, whatever you advise!
15 minutes before the meat is ready, we throw the champignons into the pan, after boiling, we again reduce the gas.
Let the meat and mushrooms in the broth cool to room temperature, then remove from the broth to the plate.
Cut the red sweet onion into thin half rings. Use sweet lettuce onion for this recipe - it will be delicious!
Pour salt to taste in a bowl with onions, fine granulated sugar, pour apple vinegar. Mix thoroughly when the grains of salt and sugar dissolve, pour in olive oil.
Chop the boiled meat, add to the bowl with onion dressing. If the pork skin was cooked, then cut it into thin strips.
Next, add boiled champignons to the salad.
Sprinkle the salad with pork and mushrooms with finely chopped parsley, gently mix the ingredients and put the bowl in the fridge for the night.
The next day you can serve a hearty salad with pork and country-style mushrooms on the table. Besides fresh rye bread, nothing more is needed for it! Enjoy your meal.
