Pork fajitos is a recipe for a spicy Mexican snack, which consists of beef stew with vegetables, chili and fresh salad. According to tradition, all ingredients are wrapped in a round cake made from unleavened dough made from wheat or corn flour - tortilla, which should not be confused with Spanish tortilla (omelet with vegetables). In Mexico, fajita is served separately - meat, sliced vegetables and flat cakes, while you yourself collect your own version of the dish. So that the guests do not arbitrarily, I collect fajita itself, because if the process is not controlled, a bunch of chopped lettuce and not a crumb of meat stew will remain on the table. Collect fajitos immediately before serving, so that the cake is not soaked.

Ingredients for making pork fajitos:
- 4 tortillas (thin tortillas made from wheat flour);
- 400 g low-fat pork;
- 100 g onions;
- 2 cloves of garlic;
- 150 g tomatoes;
- 2 red chili pods;
- 3 g hot red pepper;
- 3 g smoked paprika;
- 20 ml of olive oil;
- 50 g tomato puree;
- green salad leaves;
- salt, sugar, lemon.
Way of cooking fajitos with pork.
We press the garlic cloves with a knife, peel, chop. Head onions chop finely. Heat high-quality olive oil in a pan, throw onions, then garlic, add a small pinch of salt, and pass to a transparent state.
The flesh of lean pork is cut into thin and long sticks across the fibers. This dish is cooked quickly, so fatty pork will not work, it will not taste good.
Send the meat to the pan to the browned onions, fry for 4-5 minutes.
Cut tomatoes into thin slices, add to meat and onions. If you do not be lazy, you can remove them from the skin, but it is not necessary.
Now put tomato puree, sprinkle with ground hot red pepper, smoked paprika and fresh chilli pods. Chile is cut along in half, add together with the seeds - this is Mexican cuisine!
We add salt to taste with no added salt, and to balance the taste a small pinch of sugar, simmer it all together for 10-12 minutes, remove from heat.
By the way, tortillas (tortillas) are very easy to make at home. For this all you need to mix three cups of flour with a small piece of margarine, salt, baking powder and a glass of hot water. Knead the dough, roll out round tortillas and bake them in a dry frying pan. It is not necessary to fry strongly, to cook for about a minute from both sides! Flapjack should appear pale, with light brown specks.
Put the pork stew on a tortilla, pour it thickly with a thick sauce from the pan, add the chili pods.
Put the leaves of fresh lettuce, pour it all together with freshly squeezed lemon juice, add a slice of lemon and immediately serve to the table.
From the story. Fajita and burrit are the closest “relatives”, the only difference is in the way of feeding and cutting ingredients. In the first case, the meat is cut into thin strips, which, in fact, gave the name to the dish. In Spanish, the faja is a strip, since the cowboys got the trimming of meat, which they cooked and wrapped in fresh corn tortillas.
