A method of cooking thick minced meat sauce for pasta.
We do. Onions cut into thin half-rings. Garlic cloves we press with a knife, chop finely or skip through a garlic press. We warm refined olive oil in a currant, add butter. We throw the chopped vegetables into the warmed butter, pass it to a transparent state.
Next, add minced meat to the browned vegetables, in this pork recipe. You can make mincemeat from any meat, depending on your culinary preferences.
Fry meat with vegetables for 10 minutes, stirring so that the stuffing does not stick together.
Then add tomato puree. Ready tomato sauce will do, but, in my opinion, it is more beneficial to grind a few ripe tomatoes in a blender.
To the tomato puree we add red sweet pepper sliced with fine straws.
Pour the ground sweet paprika and curry powder into the pan, salt to taste and 1 teaspoon of granulated sugar to balance the flavors. Cover the pan with a lid, simmer on moderate heat for 20 minutes.
In a bowl, mix 100 ml of cold water, wheat flour and sour cream, stir it so that there are no lumps of flour.
When the meat is almost ready, add sour cream sauce, bring to a boil again, cook another 5-7 minutes.
For 1-2 minutes until tender, throw in the sauce finely chopped greens - cilantro, parsley or dill, in short, the one that pleases.
Mix and remove the finished dish from the stove.
By the time the sauce is ready, cook the pasta, pour high-quality olive oil of the first cold-pressed variety extra virgin. We leave in a saucepan with pasta some water in which they are cooked, it will taste better.
Pour pasta sauce and immediately served to the table. Enjoy your meal!
By the way, according to this recipe, you can make a vegetarian sauce, replacing minced meat with minced boiled forest mushrooms, and sour cream with soy cream.
