Stewed pork in white wine with spicy seasonings is a simple dish that falls into the category of “put on the stove and forget”. I do not advise you to use very cheap, because the meat needs to be washed down with something, so the old classics - “Aligote”, “Riesling” and similar wines are best suited.

- 800 g of boneless pork without pork;
- 300 ml of white dry wine;
- 200 g onions;
- 1 head of garlic;
- 100 g cilantro;
- 100 g celery or parsley;
- 50 g dried carrots;
- 20 g dried chili;
- 3 bay leaves;
- red pepper, black pepper, salt, oil for frying.

Peel a piece of pork from the films, wash, dry with a paper towel and sprinkle with ground red pepper.
Cut the meat into cubes measuring 3x3 centimeters or a little less, because the dish is cooked for a long time, you do not need to grind.
Onions clean from the husk, chop finely. Onions should be plenty, in the process of stewing, it is completely boiled and enriches the sauce with its taste, so the more onions, the tastier.
Crushed garlic teeth with a wide knife right in the husk, so garlic is easier to clean. Then we remove the husk, chop the garlic teeth into mush.
A large bunch of cilantro and the same bunch of parsley or celery chop finely. Stems are not necessary to cut, they, as well as onions, come in handy in the sauce.
Next, pour some vegetable oil for frying, for example, sunflower or rapeseed, into the roaster. Throw in the roaster half of the chopped onion, some garlic and some pork.
On the pork lay out half the greens, then again the onions, the remaining meat and greens. All together, salt to taste, sprinkle with ground red and black pepper.
Add dried carrots and dried chili, pour a glass of dry white wine, put bay leaves and set the roaster on the fire.
Cover the stew with a lid and cook on low heat for 50 minutes after boiling. After about 30 minutes, you can pour another half glass of wine if the liquid evaporates strongly.
