A simple goulash made from pork with pancakes on kefir - a summer machanka - is a dish of Belarusian cuisine, which I improved a little in my own way. Classical machanka - a dish so high in calories that in the summer I do not recommend cooking it. In winter, another thing, I want to warm up, eat something nourishing and fat.

Ingredients for the preparation of summer machanka - pork goulash with pancakes on kefir.
- 120 ml of kefir;
- 1 egg;
- 35 ml of olive oil;
- 200 g of wheat flour;
- 4 g of baking soda;
- salt, oil for frying, butter.
- 400 g low-fat pork;
- 100 g onions;
- 100 g carrots;
- 50 grams of sweet pepper;
- 30 g chopped greens;
- 200 g sour cream;
- salt, pepper, oil for frying.

First make pancakes
On kefir, they will turn out very lush, in a word, just such a pancakes would be desirable to be dipped into the gravy and sent into the mouth.
So, pour kefir into a deep bowl, add salt and a pinch of granulated sugar to taste. By the way, instead of kefir, you can knead the dough on yogurt, yogurt and even sour cream (not very fat).
In a bowl with kefir we break a chicken egg, add high-quality olive oil of the first cold-pressed.
Whisk whisk ingredients until smooth.
Wheat flour mix with soda, sift, pour into a bowl, knead the dough, which in its density should be similar to sour cream.
Dry foods have different moisture content, eggs are also different, so there are no clear recommendations on how much flour there is in the dough. There is an approximate basis of the recipe, for the rest, be guided by your flair: if it turned out very thick - add kefir, liquid flour.
Sprinkle the frying pan with non-stick coating with cooking oil, fry pancakes for 2 minutes on each side until golden brown. Fold the slide, grease with butter.
Next, let's do some goulash
Lean pork cut into thin strips across the fibers. Grate carrots on a coarse grater. Onion cut ringlets. Finely chop a bunch of fresh greens.
In a deep frying pan, heat 2-3 tablespoons of cooking oil, throw the onions and carrots, pass 5 minutes until soft.
Add pork to carrots. Fry vegetables with meat for about 10 minutes, then add diced sweet peppers and greens, cook a few more minutes.
Next, add sour cream, herbs, pour salt to taste and a little sugar for balance.
We extinguish everything together for 5 minutes, remove the fire.
At the table we serve a pan with hot goulash and a plate of pancakes. Dunk pancakes in the gravy and eat in the bite with meat. Summer machanka - pork goulash with pancakes on kefir is ready. Enjoy your meal!
Summer macanque can be cooked with veal or chicken fillet, and add a little tomato paste or regular ketchup to the gravy. These small lyrical digressions will allow you to diversify the menu with little effort. By the way, for a change, you can bake from this dough not pancakes, but small thick pancakes.
