Waldorf salad with chicken and almonds, or “Waldorf” salad - a classic American cuisine. The name of the snack is obliged to the hotel of the same name in New York. Initially, it was made from sour-sweet apples, celery, walnuts, hot cayenne pepper were added, and all this magnificence was seasoned with mayonnaise. Over time, began to appear different variations on the theme of the popular dish, now it is often added grapes, raisins or fresh berries, for example, strawberries. Nuts also use different, tasty is obtained with a nutty mix. However, the base remains the same - apple and celery.
With a boiled chicken breast, this light snack dish turns into a full meal, you can cook it for lunch or dinner. Calories in this salad a little, so the recipe can be included in the diet menu. For a diet recipe, I advise you to cook mayonnaise at home without vinegar, a delicious sauce will work with quail eggs and sea salt.

Way of making salad with chicken and almond “Waldorf”
For this recipe, one medium-sized chicken breast is enough - one small fillet (half breast) will be released per serving. Meat is separated from the bones, remove the skin. Put the fillet in a saucepan, add a bunch of parsley, onion, a couple of garlic cloves, bay leaf and salt. After boiling, cook for 20-25 minutes, this time is enough to cook juicy chicken meat.
Put the fillets on the board, cool, cut into thin slices. Meat must be cut across the fibers, first, it is easier to cut, and secondly, the slices are smooth and neat.
Apples for salad with chicken and almond “Waldorf” choose green, sweet and sour. Carefully wash the fruit, then remove the core with a special device. Shred apples on a vegetable grater in thin, almost transparent slices and immediately pour over freshly squeezed lemon juice. If you do not pour lemon juice on the sliced apple, it will instantly darken and will not look very appetizing.
We divide the celery stalks, cut off the dense and fibrous lower part, which can be left to cook the same chicken broth. The light green part of the stalks is chopped finely.
Combine chopped celery with apples and slices of chicken breast in deep dishes.
When all the ingredients are in the salad bowl, you can spice up the dish. Add tasty high-quality mayonnaise, gently mix.
