A salad without mayonnaise, and although some nutritionists do not include avocados as products that should be included in the diet menu, more recently there have been calls for its protection. Boiled chicken breast, most often, the taste is rather dry. What a sin to conceal, white chicken meat is rarely juicy, especially if it is boiled. I will give a few tips based on personal experience that will help you prepare tasty and wholesome food without getting better.
To make the salad tasty, you need to add some healthy fats to the boiled chicken, which can be found in avocado and high-quality olive oil. Juicy vegetables - spinach and cucumber, will bring their own special touch and freshness. A sweet carrot will be suitable for sweetness, and a green onion will add some sharpness to the dish.
Vinegar for dressing dietary salads is not suitable, it must be replaced with freshly squeezed lemon juice. Instead of the usual table salt, take a large sea, just a few grains. And finally, prepare a small portion just before lunch or dinner, do not cook such snacks in large quantities, only spoil the food.

Ingredients for chicken salad with avocado and cucumber
- 120 g of boiled fillet;
- 1 \ 2 avocado;
- 1 carrot;
- 1 fresh cucumber;
- a handful of fresh spinach;
- a few feathers of green onions;
- extra virgin olive oil;
- 1 \ 2 lemon;
- sea salt, black pepper to taste.
Chicken salad with avocado and cucumber preparation
Spinach leaves put in cold water, then rinse with running water to wash off the sand. Dry the leaves on paper towels or in the dryer for greenery. Cut the spinach into strips, put in a salad bowl.
Three fresh carrots on a large vegetable grater. Sprinkle a pan with a non-stick coating with a drop of olive oil, throw carrots on a pre-heated pan, pass a few minutes. Cool the browned carrot and add to the salad bowl.
Cut the ripe avocado in half, remove the bone. Half of the avocado is peeled, cut into thin strips, immediately pour with lemon juice so that the slices are not oxidized in air. Add the avocado in a salad bowl.
Cut into large slices of boiled chicken fillet (without skin!), Add to the rest of the ingredients of chicken salad with avocado and cucumber.
Fresh cucumber shred thin strips, if the peel is bitter, then cut it off so as not to spoil the taste of the dish.
Cut a few finely chopped green onions, throw in a salad bowl.
