Chicken soup with funchozy - a simple hot dish of Chinese cuisine. The recipe is suitable for the diet menu, since there are very few calories per serving and almost no fat. To cook the broth quickly, you can cut the chicken fillet from the seed. I put in a small saucepan fillet, bone from the breast and skin, add seasoning. When the meat is ready, the bones and skin are sent to the neighbor's cat, and I still have clear broth and juicy fillet for cooking.

To make a clear soup, you first need to boil the base - clear chicken broth. There are no special secrets of its preparation, the most important point is that the broth should not boil intensely, that is, cook the soup on the smallest fire so that it only gurgles lightly.
For broth, we take a small chicken breast, bones and skin will also be useful, so you do not need to cut the fillets. To the breast, add a few peeled carrots, an onion head with husks, crushed garlic teeth with a knife, 2-3 bay leaves, a teaspoon of black peppercorns. We also put a small piece of ginger root (about 5 centimeters), green onion feathers and celery with greens and roots.
So, after all the ingredients have been prepared and collected in a soup pot, pour 2.5 liters of cold water, pour the salt to taste and put the pan on the stove, bring the broth to a boil. After boiling, reduce the heat to minimum, remove scale with a slotted spoon, cover the pan with a lid. Cooking 40 minutes.
We get the chicken breast out of the pan, filter the broth through a fine sieve. To achieve perfect transparency you can lay in a gauze folded in several layers.
