Cauliflower pancakes in the oven - tender, golden, very tasty. Cauliflowers are used to make cutlets, casseroles, cream soups, but pancakes, in my opinion, are the most appetizing!
Cooking pancakes, cheese cakes or small pancakes in the oven is much simpler and easier than frying in a frying pan. First, you spend significantly less vegetable oil, it reduces fat and reduces the number of calories per serving. Secondly, the stove stays clean, because everything is cooked in a closed oven, and not in a frying pan, when oil splashes fly around the burner. Thirdly, the kitchen will never smell like burning oil, which is typical for frying on the stove, only the delicious smell of vegetable pancakes!

Ingredients for cauliflower pancakes
- 450 g of cauliflower;
- 120 g carrots;
- 50 g sour cream;
- 1 chicken egg;
- 55 g whole wheat flour;
- 20 ml of olive oil;
- sea salt, baking powder, vegetable oil.
Method of cooking cauliflower pancakes
Rinse the cauliflower head with cold water, cut off the inflorescences from the stalk. The inflorescences are placed in the bowl of the blender, and the stalk can be left to cook cabbage soup or chicken broth.
We clean the carrots, rub them on a large grater, add them to the blender. If you have a powerful processor installed in your blender, just cut the carrot into small slices.
Next, add a little sour cream to the vegetables. For the diet version of the dish, replace sour cream with low-fat kefir.
Several pulsed inclusions grind vegetables in a smooth mashed potatoes.
Then we add an egg to the blender bowl, which will serve as a kind of glue that holds the vegetables together.
Pour dry ingredients - whole wheat flour, sea salt to taste, baking powder on the tip of a knife. Mix the ingredients until smooth. By the way, for the diet menu, replace wheat flour with oat bran or wheat bran.
We shift the dough into a deep bowl, add the extra virgin olive oil of the extra virgin variety, knead the dough with a spoon, the consistency of it will be like very thick sour cream.
Grease baking tray or non-baking baking dish with refined vegetable oil for frying. Then lay out a spoonful of pancakes, leaving a small distance between them, since the pancakes will increase slightly when baking.
We heat the oven to a temperature of 190 degrees Celsius. Place the pan with the pancakes in the middle of the oven. We bake for 4-5 minutes on each side - when one side is fried, we get a baking sheet, gently turn the pancakes over, and again put the baking sheet in the oven. Do not forget to close the oven door, so as not to let out the heat!
Serve cauliflower pancakes at the table hot, piping hot. Season with sour cream or Greek yoghurt to taste.
Vegetable pancakes are a great way to hide unloved vegetables in the children's menu. Small pickups will not be able to determine the composition of delicious pancakes, if you do not involve the kids in the cooking process itself.
