In my opinion, this is one of the most simple and delicious homemade desserts for adults, unfortunately, the younger generation can only lick themselves off to the side. These sweets are not for kids. Truffles are made with different fillings, stuffed with nuts, candied fruits or dried fruits. Roll in biscuit, sand or nut crumbs. In short, you can let go of the fantasy in flight and prepare on the basis of this recipe a whole box of assorted homemade candies!
The history of the origin of chocolate truffles leads us to a French pastry shop. According to legend, the assistant chef failed chocolate ganache, and to hide his fault, the cook prepared candies. Chef liked sweets, since this popular dessert is prepared all over the world with the same success.

Ingredients for dark chocolate homemade truffles with whiskey
- 320 g of dark chocolate;
- 80 g 33% cream;
- 80 g whiskey;
- 25 g butter;
- 50 g of cocoa powder.
A way to make homemade dark chocolate whiskey truffles
There are recipes for which accuracy is not needed. Many products take "by eye", but not in this case! To make candy you need precision!
So, weigh the right amount of chocolate. Dark chocolate or light - decide for yourself, you can mix both kinds in equal parts.
Breaking chocolate into smaller pieces, the smaller, the better. Chocolate chips melt quickly in a hot environment.
Pour heavy cream into a saucepan. The fatter the cream, the sweeter the sweets, so I advise you to take the cream, the fat content of which is not lower than 26%.
Add a piece of butter to the saucepan, again - a quality butter (fat content 82%).
Pour into a stewpan whiskey - brand drink to your taste and wallet.
Heat the mixture to about 80 degrees Celsius, no need to bring to a boil!
Hot mixture immediately, pour a thin stream into a bowl with crumbled chocolate.
Constantly stir the contents of the bowl so that all the pieces of chocolate melt. Next, knead the mass with a silicone spatula for about 5 minutes. The chocolate mass is shiny and silky. At this stage, the mass is liquid, it is called ganache.
Pour the chocolate mass into a convenient container and put it in the refrigerator for 4-6 hours or overnight.
When the ganache hardens well, we make truffles.
Put cocoa powder on a flat plate. Take two teaspoons. Forming sweets with spoons is in some ways similar to cooking quenelles.
First, with one spoon we take ganache, with the second spoon we help to remove ganache directly into the plate with cocoa.
At this stage, you can work with your hands. I advise you to hold your hands under a stream of cold water and wipe dry with a napkin.
We take candies, we roll in cocoa, we roll balls between palms.
Put homemade dark chocolate truffles on a board or a plate, sprinkle with cocoa powder, put in the fridge.
Truffles made according to this recipe can be stored in the refrigerator for 2-3 days.
