Okroshka with sausage on vegetable broth - cold vegetable soup and boiled sausage for hot summer days. The name of the soup comes from the word “chop” - chop finely. Sliced finely meat, boiled potatoes, pickled and fresh cucumbers and spicy greens, and then poured kvass. Traditional okroshka was filled with special white kvass, which was made from rye flour and malt, this kvass should be savory. Nowadays, a liquid base for cold soup is made from whey, airan, mineral water, kefir, and even plain water with vinegar.

Ingredients for okroshka with sausage in vegetable broth
- 200 g of boiled sausage or 2 big sausages;
- 2 hard boiled eggs;
- 200 g boiled potatoes;
- 200 g fresh cucumbers;
- 85 g green onions;
- 60 g arugula;
- 30 g of dill;
- 150 g sour cream;
- salt, pepper.
- 3 celery stalks;
- 1 onion;
- 1 carrot;
- bunch of parsley;
- arrows of garlic and 2-3 cloves of garlic;
- filtered water.
Method of cooking okroshka with sausage in vegetable broth
First, prepare the vegetable broth, it is very simple. Put the celery stalks in large saucepan in a saucepan, add a bunch of parsley, arrows or garlic cloves, a carrot, an onion cut into four parts. Pour 1.5 liters of water. Bring to a boil, close the lid tightly and cook on low heat for 45 minutes. Strain the broth and cool to room temperature.
Such broth can be cooked in large quantities, poured into portioned pots and frozen. Then use as needed for cooking soups, sauces and, of course, okroshka with sausage in vegetable broth.
When the broth is ready, you can cook okroshka. Ingredients for okroshka need to be crushed and mixed with broth just before serving. This cold soup is cooked just before serving.
So, chop a bunch of green onions, rub the onion with salt in a mortar until the green juice stands out.
Cut boiled sausage or wieners into small cubes. Boiled new potatoes cut in the same way as sausage. Some fresh cucumbers are cut into strips, some are rubbed on a large grater.
Hard-boiled chicken eggs are chopped finely.
In a bowl or saucepan lay out sour cream and green onion, ground with salt, pour the cooled vegetable broth, whisk stir the ingredients until homogeneous. Onion juice will give the basis of okroshka a light green tint.
In the seasoned broth, send all the crushed ingredients, add the finely chopped arugula and dill, pepper them with freshly ground black pepper.
Let us insist on okroshka with sausage on vegetable broth in the refrigerator for about half an hour and you can have lunch. Serve cold soup with black bread on the table. Enjoy your meal!
