Method of making baked apple roses from puff pastry

As usual when working with the finished puff pastry, we take it out of the freezer in advance and leave it at room temperature for half an hour.

We told how to make a good puff pastry in the recipe “Puff pastry”.

In the meantime, the dough thaws, prepare the apples. Wash them, wipe them with a napkin, cut them into halves or quarters, peel off the hearts, and cut them into slices as thin as possible. Too thick slices of apples when rolling dough roll will break. Therefore, ideally, apple slices should “shine” - the thinner the “petals” of apple roses, the easier it will be to turn them, and the more elegant the roses will look.

To keep the apples dark, you can sprinkle the slices with lemon juice.

When the dough becomes soft, proceed to the formation of "roses". First, roll out the dough with a rolling pin, in one direction to save the layers. We need a cake about 2-3 mm thick.

With the help of a confectionary brush, we lubricate the strips with apricot jam.

And then we put slices of apples on dough strips - slightly overlap and so that the edges of the “petals” slightly protrude over the edge of the dough, and the lower half of the stripe remains free.

Sprinkle apples with a pinch of cinnamon.

Now we bend the dough strip in half so that the apple slices appear as if in a pocket.

And turn the strip with apples roll.

That is such a beautiful coral rose! Even green roses can be made from apples! Or two-color - choose apples of different colors and varieties and fantasize!

Now, so that the roses do not unwind during baking and preserve the form, they should not just be put on a baking sheet, but placed in cupcake forms, most conveniently in silicone ones that perfectly hold the shape and do not need to be lubricated (except for first).

Metal molds can also be used, but they need to be greased with vegetable oil so that the dough does not stick. But the paper does not fit - they are very thin and baking can be deformed.

If you do not have molds, and you want to make apple roses, you can try baking roses, holding them together with toothpicks. Only then surely take out inedible "fastenings".

Put the roses in the oven, preheated to 190-200 ºC, and bake for 40-50 minutes. Roses are ready when the puff pastry from soft, raw becomes almost dry (taking into account the moisture from apples) and golden. If the edges of the apple “petals” begin to burn slightly before the dough is ready - cover the “roses” with a sheet of foil for baking.

When the finished “roses” have cooled slightly, we shift them from the molds to the dish. The treat will be even more beautiful if you sprinkle the puffs over the sieve with powdered sugar.
