Salad “Rainbow” is a simple recipe for a very tasty portioned vegetable dish with meat, in this recipe with boiled chicken. The rainbow salad probably has the most different cooking options - you can collect a variety of vegetables in any combination on a plate. Two main ingredients - fried potatoes and meat should be required, the other vegetables complement the dish with taste and color. Sauce for a salad of vegetables with meat "Rainbow", you can take ready, for example, ordinary mayonnaise, or mix homemade seasoning to your taste.
So, for cooking vegetables salad with meat "Rainbow" vegetables, except potatoes, onions and fresh greens, boil in uniform. Then we grind, we lay out in bowls. - 250 g of boiled chicken;
- 300 g potatoes;

- 30 ml of olive oil;
- 20 g butter;
- 20 ml of apple cider vinegar;

We start with potatoes. Clean, cut in small pieces, put in cold water, wash - wash off starch. Then we shift the potatoes in a colander, when the water is drained, lay out on a towel.
In a frying pan, heat the olive oil or odorless vegetable oil, add cream. In the heated oil, throw the sliced potatoes, fry until done, then add salt and cumin.
Spread on a plate a portion of fried potatoes.
Next, pour mayonnaise into a sauceboat and place it in the center of the plate, around it we will form a vegetable rainbow.
Carrots, boiled in uniform, rub on a large grater, salt to taste, put next to the potatoes.
White sweet onion, it is often called salad, cut into thin half rings. Put the onion in a bowl, add sugar, vinegar and a little salt, rub it with your hands, leave for a few minutes. Then lay out next to the carrot, sprinkle with ground red pepper.
Sheet lettuce is thoroughly washed in a bowl of cold water, dried in a dryer or on a paper towel, cut into strips. A bunch of fresh greens chop finely, mix the salad with greens, pour olive oil, spread next to the onion.
We split boiled chicken - remove meat from bones, remove skin. Meat dismantled on the fiber, put next to the greens.
We cook the beets in the uniform, cool them in cold water, clean them, rub them on a large grater. Season the beets with a drop of vinegar, a pinch of salt and a teaspoon of high-quality olive oil.
