Of great importance is also the preparation of products. Never cook vegetables for herring under a fur coat the day before, they will lose some taste in the fridge overnight, they will become fresh. Cook the vegetables 2-3 hours before cooking and cool them to room temperature. You can also bake carrots, beets and potatoes in the oven in foil.
Herring choose the fattest one. Atlantic herring is fatter, but Pacific herring have fewer small bones and are easier to clean. You can also pickle herring at home, it will take 3-4 days.

Method of making the correct herring under the fur coat
Prepare the ingredients for herring under a fur coat. It is convenient to cut and grate everything, and then collect the salad in a culinary ring, on a plate or in a transparent salad bowl.
So, clean the herring from the bones and peels, cut finely.
Cooked hard-boiled chicken eggs cool, cut into cubes.
Onions chop into small cubes. If the onion is “evil,” pour boiling water over it for 5 minutes, drain the water, rinse with cold boiled water.
Peel carrots, beets and potatoes, rub them on a large vegetable grater.
When all the ingredients for herring under the fur coat are prepared, you can collect the salad.
Put the culinary ring on a flat plate. For the holiday feed, I use a heart shape. In this form, the most banal snack looks very presentable.
We put the first layer - finely chopped herring.

Then put onions, distribute evenly. Onions will mix with mayonnaise, so it does not need to be separately greased.
Carrot also sprinkle with a pinch of fine salt, put on the onion, make a mayonnaise net. Put diced eggs on carrot, pour plenty of mayonnaise.
The next layer of herring under the fur coat is grated boiled beets.
We spread the remaining mayonnaise on the herring under a fur coat, distribute it evenly with a fork. Mayonnaise mixes with beets and eventually turns a pale pink color.
We remove the salad in the refrigerator compartment for 8-10 hours. During this time, the layers are saturated and compressed. Time for impregnation is a must! Take this into account and cook herring under a fur coat on the eve of the feast.
