Vegetable stew with chicken meatballs - a hearty main course for the daily menu. For the stew with beans, you must first boil the beans until cooked or use canned.

Method of cooking vegetable stew with chicken meatballs
Grind chicken fillet. Chicken meat is easy to turn into minced meat with a sharp knife on a board or chop in a blender.
Add minced onion, cold cream, pepper and table salt to taste to chicken mince.
Mix the minced meatballs thoroughly, make small balls with wet hands, put them on an oiled chopping board. We remove the board with meatballs in the fridge for 30 minutes.
Making the stew
In a large saucepan, heat the olive oil, throw the onion sliced in half rings, pour in a pinch of salt. Passe the onion to a translucent state, when it becomes soft, you can add other vegetables in turn.
We cut celery stalks in small cubes, throw them to the onion.
Just like celery, we cut carrots and send it to the pan. Fry celery, onions and carrots together for 10 minutes.
Cut the ripe red tomatoes in half, remove the stem. Cut tomatoes large, put in a saucepan.
Behind the tomatoes, add a stripped pod of sweet bell pepper. Quickly fry vegetables all over medium heat.
Now put in the pan the boiled red beans. To cook the beans quickly, soak them before cooking for 3-4 hours in cold water. It is desirable to change the water a couple of times. Then put the bean beans in the pan, pour two liters of cold water and cook on low heat for 1 hour after boiling, do not add salt. We do not pour out the decoction, it will come in handy later.
Salt everything together to taste, add a couple cups of bean broth, close tightly with a lid, cook on low heat for 20 minutes.
7 minutes before readiness we place chicken meatballs on vegetable stew, again close the pan with a lid.
To the table we serve vegetable stew with chicken meatballs hot, sprinkle with fresh greens, you can season the vegetables with sour cream or yogurt.
