Lentil soup with ribs - a hearty first course, a little rustic, which you will agree, in our time is very popular. It is believed that the soup is only a vegetable dish, and there should be no meat in it. But now they love to break traditions, to introduce something of their own, in most cases it turns out delicious, so what difference does it make what name. Moreover, the dominant product in this recipe is lentils, so that the main rule of cooking broth is observed.
In my recipe is green lentils, it cooks longer than red. Typically, the package shows the approximate cooking time, so red lentils should be added to the pan a little later.
I was cooking pork ribs soup, but this is an optional prescription. Beef or lamb ribs are also suitable for cooking, and the cooking time is about the same.

- 250 g of green lentils;
- 200 g pumpkin;
- 500 g pork ribs;
- 2 potatoes;

Method of cooking rustic lentil soup with ribs
Two large onions clean, cut finely. Pour 2-3 tablespoons of odorless vegetable oil into a large saucepan, throw the onion, sprinkle with salt to make the juice stand out. Fry onions on moderate heat to an almost transparent state, making sure not to burn.
Cut carrots into thin straws, add to onions. At this stage, you can cover the pot with a lid so that the carrots are soft and quickly roasted.
Cooking a carrot for about 10 minutes.
Next, pour black mustard seeds into the pan, put the leaves of laurel, freshly ground black pepper. Fry vegetables with spices for a few minutes.
Cut the stem of tomatoes, cut vegetables into small cubes, throw them into the pan. Tomatoes can be replaced with tomato puree or pasta.
The rib plate is cut into hotel ribs, put the ribs in a saucepan.
Fry meat until golden brown on high heat.
Pumpkin cleaned from the skin, remove the seeds. Pulp into cubes, add to the rest of the ingredients.
Lentil pre-soaked in cold water, thoroughly washed. Add the washed lentils to the pan.
