We choose in the market or in the store fleshy tarry pork. I chose two medium-sized, for a small company this is what you need. You can take one big leg, but it needs to be cooked longer, and the bone in it is big.

Depending on the purpose for which the knuckle is intended, its further fate will be determined. For example, for a salad, nothing else needs to be done, just cool the meat.

If you serve the knuckle on the table entirely, and even with fried potatoes, it is advisable to brown the skin.

To do this, mix in a bowl ground sweet paprika with high-quality olive oil, brown sugar and yellow mustard seeds. Lubricate the skin with a brush and send in a hot oven.
