Despite the fact that the pea soup for this recipe is lean, it turns out so nourishing that you don’t think about meat! Thick, warming and very appetizing, pea soup - a gorgeous first course. Your household will ask for supplements, and more than once.
Ingredients for Pea Soup
- 2-2, 5 l of water;
- 1, 5-2 Art. peas (depending on how thick you want the soup);
- 2-3 medium potatoes;
- 1-2 small carrots;
- 1 medium bulb;
- vegetable oil;
- salt, black pepper and ground pepper - to your taste;
- bay leaf - 1-2 pcs .;
- Fresh or frozen greens: parsley, dill, green onions.
Method of cooking pea soup
Since dry peas are cooked longer than all other ingredients, we will put it to cook first. Pour cold water into a saucepan, sprinkle peas and boil over medium heat. When it boils, the fire will decrease slightly, and the lid will be moved to the side, as the peas try to escape to the stove. But we will not allow this, occasionally stirring and removing foam with a spoon.
In the meantime, the peas are boiling (about half an hour), we prepare a carrot-onion zazharku.
Cut onions smaller and pour into a frying pan with heated vegetable oil. Fry, stirring, over medium heat, so that the onions become translucent, and add coarsely grated carrots.
After stirring, we continue to fry the carrots and onions until the vegetables are soft and have a beautiful golden tint, which the frying will transfer to the soup.
Peel the potatoes and cut into small cubes.
Peas become soft, it's time to add the rest of the ingredients. Pour the potato cubes into a saucepan, stir and boil the potatoes until half cooked (about 7 minutes).
Then add a fry - look how beautiful our soup immediately became! Stir and salt - about 2/3 tbsp. l salt or according to your taste.
After 2-3 minutes, it's time to add spices. Put in the soup 10-15 pcs. peppercorns and 1-2 bay leaves. What a delicious flavors instantly spread throughout the kitchen! Tasty smells are able to lure even neighbors to the table, not like the household (even those who usually dislike the first courses). And in order for pea soup to become even more tasty and brighter, add a couple of spoons of chopped greens 1-2 minutes before the readiness is ready.
