Homemade cookies - a recipe for the Easter table - tender and crumbly saber with peanut cream and chocolate icing. “Sable” in French means “sand”. There are many recipes and secrets of this simple dough, but the most important thing to remember is an approximate classic proportion - 1 part sugar powder, 2 parts high-quality butter and 3 parts high-grade wheat flour. Instead of eggs, you can add water, season the dough with vanilla or cinnamon, but one thing is always important - the ratio of sugar, butter and flour.

Ingredients for homemade cookies for the Easter table
For short pastry
- 110 g of butter;
- 45 grams of powdered sugar;
- 180 g of wheat flour in \ s;
- 35 g of orange powder;
- 1 chicken egg;
- pinch of fine salt.
- 100 g of butter;
- 50 g of powdered sugar;
- 55 g peanut butter.
For glaze and decoration
- 50 g of granulated sugar;
- 50 g sour cream 26%;
- 50 g butter;
- 30 g of cocoa powder;
- olive oil, confectionery dressing.
Method of making homemade cookies for the Easter table
We cut butter into cubes, put it in a wide bowl or lay it on a wide chopping board. Top-grade wheat flour mix with a pinch of fine salt, pour on oil. Then add orange powder and powdered sugar. To prepare the powder, you should chop dried orange peels in a coffee grinder or blender.
With our hands, mix the dry ingredients with the butter, break a raw chicken egg into a bowl, quickly knead the dough. Wrap the dough in the food film, remove for 25 minutes in the refrigerator.
Sprinkle flour on the chopping board, roll out the dough with a layer of about half a centimeter or a little thinner.
A glass with thin walls cut out the round saber.
On a baking tray we place a sheet of parchment for baking, spread the cookies at a short distance from each other.
Heat the oven to a temperature of 175 ° C. Put the baking sheet in the center of the oven, cook for 8-10 minutes. Put the finished cookies on the board, cool to room temperature.
Making the filler. Whip in a blender softened butter, gradually add icing sugar. Mass whip until it becomes light and lush.
Next, without stopping the mixer, gradually add peanut butter. The result is a delicate cream with peanut flavor.
We divide all the cookies into two parts. We spread the peanut cream on half of the cookies, cover with the second half, put in the refrigerator.
Making chocolate icing. We melt sugar water with butter, sour cream and cocoa powder in a water bath. When the mass becomes homogeneous, add 1-2 teaspoons of olive oil for shine.
Pour homemade biscuits to the Easter table with slightly warm icing. Glaze is distributed over the surface with a wide knife or spatula.
Sprinkle with confectionery products and sugar ornaments.
