Cauliflower stew with turmeric is a vegetarian dish, which I advise everyone to include in the Lenten menu. For those who are watching their weight or want to lose weight, I advise you to remember cauliflower recipes as often as possible: 100 g of the product contains only 30 kcal. Unlike its close relative of white cabbage, cauliflower has a delicate and exquisite taste, and therefore enjoys greater popularity.

Ingredients for cauliflower stew with turmeric
- 400 g of cauliflower;
- 80 g onions;
- 180 g carrots;
- 150 sweet peppers;
- 4 cloves of garlic;
- 1 chili;
- 1 teaspoon ground turmeric;
- 15 ml of olive oil;
- 1 tablespoon of mustard beans;
- 1 \ 2 lemon;
- salt, ground red pepper, dill.
Method of cooking cauliflower stew with turmeric
Cauliflower wash, disassemble into small inflorescences, cut off dark spots (if any). If the pieces are large, then cut them into two parts. Cut off the stump, it is better to leave it for the soup.
Divide the cabbage into two portions. In a deep saucepan, heat about 1.5 liters of water to a boil, add a teaspoon of salt. Put the first portion of cauliflower, blanch 8 minutes, lay back on the sieve.
Then add a teaspoon of ground turmeric into the water, drop the rest of the cabbage, blanch for 8 minutes, discard on a sieve. The more turmeric you add to the water, the more intense the yellow color will be, but do not overdo it, if you pour in too much, the vegetables will taste bitter.
We clean the sweet Bulgarian pepper from seeds and partitions. The flesh is cut into thin strips. I had yellow pepper, but if you want to make a colorful stew, then take half the red and green.
Throw a carrot thinly or rub with a grater for Korean carrot. The thinner the carrot is, the faster the stew will be made.
We clean the garlic cloves from the husk, cut into large pieces. Green chili pepper cut into small rings. If the pepper is bitter, but not hot, it can be cut with the seeds and the membrane, and it is better to clean the hot pepper.
We heat refined, unscented olive oil or any other vegetable oil in a roasting pan, put chopped onions, fry to a transparent state.
Now add shredded carrots to onions, fry for 5 minutes to make the carrot soft. Then we put the rest of the vegetables - blanched cabbage yellow and white (both portions), sweet peppers, garlic, chili. Pour the mustard seeds, roasted in a dry pan to a dark color, ground red pepper and salt to taste.
The lid is closed with a lid. Cook on quiet fire for 12-15 minutes.
Put the vegetables in a plate, pour with freshly squeezed lemon juice, decorate with a sprig of dill. Serve the dish hot.
