- 2 liters of filtered water;
- 800 g stem celery;
- 500 g young cabbage;
- 150 g onions;
- 200 g of cauliflower;

- 5 g ground turmeric;
- 5 g ground red paprika;
- 1 cube of vegetable stock;

We start traditionally with slicing onions. Then we measure out two teaspoons of high-quality olive oil, pour it into a thick-walled pot or in a deep brazier. The dishes must have a tight-fitting lid.
Then we throw the chopped onion into the heated oil, add a tablespoon of water, and pass for 3-4 minutes.
The onion should become translucent, but not burn, if the moisture leaves, and the onion is still not ready, then add some more water.
Next, put in the pot cauliflower, disassembled into small buds. Her stalk can also be put into action, cut into thin strips.
We chop thin white cabbage into thin strips, add to the remaining ingredients.
Now came the turn of the vegetable, which gives the name of the soup, that is, celery. The lowermost part of the stems near the rhizome is cut off (useful for cooking meat broth). Stems and greens cut finely, throw in the pan.
To give the dish a sour note, put the tomato sliced in thick slices.
And for aroma we add sweet Bulgarian pepper, better than red color, to the soup to create a rich palette of color.
Pour cold filtered water into a saucepan, put 2-3 bay leaves, ground turmeric and paprika, add a cube of vegetable broth.
We close the soup tightly, well, if almost no evaporation during boiling will penetrate. Bring to a boil, reduce the gas, cook for 35-40 minutes.
We pour celery soup in hot plates, sprinkle with freshly ground black pepper, squeeze lemon juice straight into the plate, decorate with greens. No need to salt: paprika, black pepper, lemon juice and a cube of vegetable broth in the soup is enough for a rich taste.
