In a skillet, heat the olive oil for frying, add a little butter, finely chopped leek, chopped celery stalk, and onions. Salt vegetables, simmer until soft, and when they cool, add vegetables and quail eggs to minced chicken.
Knead the minced meat well, if necessary add one tablespoon of semolina or ground crackers, form small cakes of minced meat. Fresh carrot cut into thin bars, blanch in boiling water for 3-4 minutes, so that the carrot is soft. In the middle of the cake, place the cooled carrot bar.
