Sometimes you want to pamper your family with dumplings. But the preparation of this dish takes a lot of time and effort.
Lazy dumplings are a great way to simplify the process of cooking your favorite dish.
Lazy dumplings - the basic principles of cooking
Dough and stuffing do the same as for ordinary dumplings. The dough is rolled into a large layer, spread on it with a thin layer of minced meat and rolled up. Then cut it into pieces so as to make small “barrels”.
Spread them cut down into a wide frying pan or saucepan in one row. Pour chicken broth or water, and boil over low heat for about forty minutes.
For those who do not want to mess with the dough, lazy dumplings can be made from thin pita.
Lazy dumplings are boiled, stewed with vegetables, baked in the oven or fried.
Serve dumplings with sour cream, mayonnaise or ketchup.
Recipe 1. Lazy dumplings in sour cream sauce
Ingredients
Dough:
three glasses of flour;
egg;
2/3 Art. water;
a pinch of salt.
Minced meat
600 g pork in half with beef;
two onions;
pepper and salt.
Vegetable pillow
2 onions;
two carrots;
three cloves of garlic;
sunflower oil.
Sauce
sour cream;
hops suneli;
water.
Method of preparation
1. In a deep bowl, sift flour, drive an egg, pour in water and knead the elastic dough. Cover it with a clean towel and leave for half an hour.
2. Rinse the peeled onions and pass through its meat grinder along with the meat. Mince salt, pepper and season with spices.
3. Roll out the dough into a millimeter thick layer. We spread on it the prepared stuffing, spreading it in a thin layer over the entire surface.
4. Layer with minced meat rolled into a roll, pinned on both sides. Carefully, with a knife, cut small columns.
5. Carrot clean, wash and three large chips. Peel the garlic and onions, fry and finely chop with a knife. Put the pan on the stove, heat the butter in it and fry the vegetables until soft. 6. Take a deep frying pan, lay out 1/3 of roasted vegetables at its bottom. We lay on them the cut columns, cut down so that they do not touch each other. Put the rest of the vegetables on top.
7. Mix sour cream with water, season with hops-suneli and mix. Fill the resulting sauce dumplings. For each dumpling lay out a piece of butter. Cover the pan with the lid and simmer on low heat until all the sauce is absorbed. We spread the lazy dumplings on plates, sprinkle with herbs and serve to the table.
Recipe 2. Lazy dumplings on a bed of cabbage
Ingredients
sauerkraut - 700 g;
mixed mince - 800 g;
carrot;
water;
flour;
egg;
salt and seasonings.
Method of preparation
1. Press sauerkraut. Peel and wash the carrots and onions. Onion cut into half rings. Carrot cut large. Put a frying pan on the stove, heat the oil in it and fry the cabbage with vegetables until done.
2. Sift the flour into the board on a board, make a well in it, put an egg in there, and, adding a little water, knead the dough. Cover it with a clean towel and leave for half an hour.

Recipe 3. Lazy dumplings with vegetables in the oven
Ingredients
300 g dough for ravioli;
half a kilo of precast minced meat;
lean oil;
240 g sour cream;
pepper and salt;
carrot;
tomato paste - 50 g;
onion head.
Method of preparation
1. Peel the carrots and onions and rinse them under the tap. Chop the onion into cubes, and grate the carrot. Heat the oil in a frying pan and fry until golden brown, then put the carrot and simmer on low heat for about three minutes.
2. Dumpling dough, roll into a large thin layer. In seasoning add seasoning and salt. Spread it evenly over the entire surface, leveling it with a fork. Fold the dough with minced meat into a roll, twisting loosely. Cut the roll into equal pieces, about five centimeters wide. 3. Place small rolls on a greased baking sheet, cut down. Recipe 4. Lazy dumplings with sauce
Ingredients
warm water - 75 g;
milk - 50 g;
pepper and salt;
egg;
tomato paste - 50 g;
pinch of sugar;
broth - one and a half glasses;
flour - 500 g;
onion head;
minced meat - 500 g;
carrot.
Method of preparation
1. Dilute milk with warm water. In this mixture, dissolve the sugar, salt and add the egg and butter. Knead the dough, cover it with a bowl and leave to rest for half an hour.
2. Peel the vegetables and rinse under the tap. Chop the onion into cubes, and carrot into large chips. Pour the oil in the pan and put on medium heat. Fry vegetables until soft. Then pour the broth, put tomato paste, salt and pepper. As soon as the gravy boils, turn off the heat.
3. Roll the dough into a thin layer, brush it with butter, and then spread it in an even layer of minced meat. Form a roll carefully. Then cut it into small “washers”. Every bit a little flat.
4. In a skillet, heat up some of the oil and lightly fry the washers on both sides. Put the fried dumplings in one row in a saucepan, and pour them with sauce, so that it covers them a little, and put them on the fire. As soon as the sauce begins to boil, reduce the heat and continue to simmer for another 25 minutes.
Recipe 5. Lazy dumplings from pita
Ingredients
Half a kilo of pork and beef mince;
two thin Armenian lavash;
seasoning for meat;
two slices of white loaf;
salt;
onion head;
sunflower oil;
carrot;
150 ml of sour cream;
egg;
150 g fresh tomatoes.
Method of preparation
1. Clean the vegetables, wash and chop: onions - in small cubes, and chop the carrots into large chips. Fry everything in hot sunflower oil until soft. 2. Break the egg into the pork and ground beef, add loaf soaked in milk, sprinkle with meat seasonings, salt and mix well.
3. The resulting mince distribute a thin layer over the entire surface of the pita. We twist the lavash into a roll and leave it for a while so that it is slightly soaked. Cut the rolls into small, identical washers. We spread the lazy dumplings on a pillow of vegetables so that there is little space between them.
4. Grind fresh tomatoes in a blender, add sour cream, salt and mix. Fill the resulting sauce dumplings.
5. Put the pan on the stove, bring to a boil, twist the flame and simmer for 20 minutes, cover with a lid. Then turn off the fire and leave for another ten minutes.
Recipe 6. Lazy dumplings in vegetable sauce
Ingredients
300 ml of broth;
80 g of sunflower oil;
200 g zucchini;
three cloves of garlic;
bunch of parsley;
bulb;
350 g unleavened dough;
200 g of sweet pepper;
350 g mixed ground beef;
200 g of eggplants.
Method of preparation
1. Rinse the pepper, clean the seeds and cut into small pieces. My tomatoes, pour boiling water and remove the skin. We rub tomatoes through a small grater. Clean the onion and also three grated. At the zucchini, peel off the skin and grind to large chips. Eggplant is washed and cut into small pieces. Soak them in salt water for at least half an hour, then rinse and squeeze.
2. Add minced onion and finely chopped garlic to the mince, pepper, salt and pour in a small amount of water to add juiciness. Well knead hands.
3. We put a deep stewpan on the stove, pour in a little oil and fry the garlic with onion until transparent. Then lay out the eggplant and simmer for about three minutes. Then put the pepper and zucchini. Pour in the tomatoes and cook over low heat until the liquid is absorbed and the vegetables are cooked completely. Pepper, salt and add chopped parsley. Grind the sauce slightly with a blender.
4. Roll the dough into a large, thin layer. Spread on it a thin layer of minced meat and form a roll. Then cut it into pieces 5 cm wide and lay out in a wide heat-resistant form, cut it down so that they do not touch. 5. Fill the gaps between the lazy dumplings with sauce. Then pour all the vegetable broth. Bake in the oven for half an hour at 190C.
Recipe 7. Lazy dumplings with vegetables in a slow cooker
Ingredients
dumplings dough;
butter;
minced meat;
salt and spices;
six potatoes;
mayonnaise or sour cream;
three carrots;
ketchup;
onion head;
three bell peppers.
Method of preparation
1. Dumpling dough, roll into a large layer, no more than a millimeter thick. Mince salt, season with Provencal herbs and pepper. Spread the minced meat evenly over the entire surface and form a roll. Cut it in equal, small pieces.
2. Peel the vegetables and rinse under the tap. Finely chop the onion. Carrot rub large chips. Chop sweet pepper into thin strips.
3. Put the vegetables on the bottom of the bowl, fill them with ketchup. Spread sliced butter. Put lazy dumplings on top, fill the gaps between them with sliced potatoes. Salt a little, season and half fill with water.
4. Place the bowl in the slow cooker, set the “Baking” mode for an hour. After the program is completed, add sour cream or mayonnaise and leave in the “Heating” mode for ten minutes.
Recipe 8. Soup with lazy dumplings
Ingredients
on 4 pieces carrots and potatoes;
a mixture of herbs, bay leaf and salt;
onion head;
100 ml of water;
300 g of minced meat;
egg;
two liters of broth;
one and a half century flour.
Method of preparation
1. From water, eggs and flour, knead the dough. Wrap it with cling film and refrigerate for half an hour. Then roll into a large, thin cake and distribute the stuffing over the entire surface, stepping back a little from the edges. Roll tightly into a roll, close the edges, and cut into small pieces. Put on a clean board and put in the freezer.
2. Peel the potatoes, wash and cut into small pieces. Dip it in boiling broth.
3. Peel the onions and carrots, rinse under the tap and finely chop. Put the pan on the stove, pour in the oil and fry the vegetables in it until soft. Put in a saucepan with potatoes and cook until ready. Spread the lazy dumplings, mix and cook until they pop up. Pour the finished soup into plates, add sour cream and fresh herbs.
Lazy Dumplings - Chef Tips and Tricks
- Stuff the mince in a very thin layer, but there should be no gaps on the surface. While laying out, lightly press it to the dough with a fork.
- Knead the dough is not as cool as the dumplings, let it be a little softer. As soon as it ceases to stick to hands, it means that it is enough to knead.
- Roll out the dough on a greased surface and grease the rolling pin.
- When baking dumplings in the oven, you can sprinkle the dish with grated cheese at the end.
- Lazy dumplings can be steamed, then put them on a dish and pour over the sauce, or lay steamed vegetables on top.
- Lazy dumplings can be frozen in the freezer for future use.
